  • Tofu?

    Quick question: tofu--yay or nay on induction?

    I checked the website, and if the answer is there, I overlooked it. And I can't find my DANDR at the moment...

    Furthermore, if it's allowed, what's the serving size?

    hi juli well done for asking before eating it
    Dr Atkins knew tofu as being called 'soy cheese'. It is listed on the allowed foods list in the induction chapter of DANDR under the cheese section and can be included in your cheese 'allowance' of 3-4 ounces a day.
    *All cheeses have some carbohydrate content. The quantity you eat should be governed by that knowledge. The rule of thumb is to count one ounce of cheese as equivalent to one gram of carbohydrate. Note that cottage cheese, farmer's cheese and other fresh cheeses are not permitted during Induction. No "diet" cheese, cheese spreads or whey cheeses are permitted. Individuals with known yeast symptoms, dairy allergy or cheese intolerance must avoid cheese. Imitation cheese products are not allowed, except for soy or rice cheese-but check the carbohydrate content.
    I assume you would be able to add more tofu to your menus once you reach the 'dairy rung' of OWL rather than wait till you reach the 'legumes rung' (where the other forms of soy are allowed) as it is a fermented product.

      Thanks Elizellen. I went to the store yesterday and wasn't completely happy with the meat selection, so I picked up some tofu just in case. If I wasn't allowed to eat it, I was going to sneak it into the children's food As it is, I will probably do that anyway, because it's a larger container and counting it in my cheese allowance will take longer to eat it all.

      Your before/after pictures are amazing! A real inspiration and proof that I'm in the right place. Thank you again.
