  • Appetizer ideas for Easter Dinner

    Greetings!
    I have been asked to provide "appetizers for 9 people" for Easter Dinner - these are with some people whom I have I never met. I will be on my 7th day of Atkins and really don't want to lose my momentum and don't want to announce to strangers my lifestyle change.......

    So...any suggestions on what might be good appetizers to whip up that regular folk as well as myself will enjoy? Our main dish will be prime rib so I'm happy about that - and will steer far from the cheesy potatoes........

    One idea I have is cucumbers with cream cheese and lox - any others?

    Deviled eggs - always a good option - on the diet or off!

    How about an antipasto tray? Marinated artichokes, rolled meats, olives, etc.

    chicken wings are good.

    The obvious veggie tray, with ranch or blue cheese dip.

    cheese tray- you can include crackers for the non-atkiners.

    Have a great time!!

      How about stuffed mushrooms.
      In mine I use pork sausage and cream cheese they are so good!

          yummy!
          I love to make a platter with Cheese Crisps (made by microwaving cheese) assorted crisp vegetables, a dip made from sour cream (french onion is gorgeous) and a Cheese Ball. Sometimes I make 2 or 3 smaller cheese balls, just using my regular recipes for those and roll them in paprika or parsley or chives (or sesame seeds or toasted almonds if you were on the higher rungs )

            I agree with the deviled eggs suggestion: eggs are relatively inexpensive--1 dozen egg will easily feed 9 people. Plus you can boil and make the deviled eggs the day before and refrigerate them. If you want to make them fancier, you can add finely chopped shrimp, crabmeat, minced roasted red pepper, jalapeno pepper, shredded cheese, etc.

              I myself like jalepeno poppers..you cut the peppers in half and de-seed them. Then you stuff each half with a mix of cream cheese and cheddar cheese. Then you either wrap them in bacon, or dip them in crumbled bacon. Once thats done, you toss them on the grill or in the oven...yum yum gimme some!!!

                My ham/cheese or smoked salmon/cream cheese pinwheels are always popular with non-lowcarbers as well as lowcarbers! No-one thinks they are 'diet food'.

                  I think I'll do an antipasti plate - pure Italian coldcuts and cheese plus some olives and some green veggies that are induction legal - like cucumbers - no-one will know!
