  • Questions!!

    I am on day three and doing pretty well. I tried to make mashed cauliflower and it was a mess!! Please tell me the best way to make it. Also, I used to eat so much and now I am not really hungry! When I wake up in the morning I'm not hungry at all but I will make eggs and sausage for example. At dinner I will eat about half of my food and I'm full. It's hard for me to get my recommended food in. Is this normal and should I force myself to eat?

    Ketosis is a natural appetite suppressant so not having a huge appetite means your body is burning fat for fuel! Nothing to fret about...

    That being said, don't force yourself to eat if you're not hungry but don't go more than 6 hours without eating something...a legal snack at the very minimum. This feeling won't last forever (for me it was just my second week of induction)...soon enough you'll find a normal appetite coming on!

    As for the cauliflower...can't help you there...I'm sure there's a recipe in the recipes section of the board. I prefer my cauliflower in it's factory preset unmashed condition

      Are you talking about the cauliflower recipe found in the back of the DANDR?? I use a big pot (the one used for cooking said cauliflower), and hand beaters... other people use the big mixers or food processors... or actually mash by hand..

        I am addicted to the mashed cauliflower. The secret is to make the sure the cauliflower is very dry after it is cooked. I usually cook it in the microwave in a big covered bowl with very little water. I drain it and then pat it dry as well. I put it in the food processer with cream cheese, cream and butter, salt and pepper. Yum Yum Yum!

          I steam the cauliflower until it's mushy. For a creamy mashed "potatoe" substitute, you want it cooked to the point of mush.

          Then I drain the water, let it sit because as it cools it realeases more water.

          Then I add butter and cream cheese. For a whole head of cauliflower, I'll use about 3 ounces of cream cheese and about 3-4 tablespoons of butter.

          Get out your hand mixer or immersion (stick) blender and mash to the consistency you want. If it seems too "dry" add a little cream. Don't forget your salt and pepper.

          Another cauliflower "potatoe" substitute that I *LOVE* is to make "faux-tatoe salad". Basically steamed cauliflower cut into bite size pieces, mayonnaise, a dab of mustard, I like some sliced olives, boiled egg, and dill pickle chopped up and all mixed together. Yum, Yum, Yum!

          I also do a faux-yellow-riice. Once again, steam the cauliflower, but this time, not so mushy. Drain the water, take a fork and "shred" the cauliflower until it looks the consistency of rice, add some butter 3-4 tbspn for a whole head of cauli and a packet of Goya Sazon (seasoning) for Con Azafran. (it's a yellow or orange spice). This makes it "yellow" It is soooo yjmmy.
