Do you think it is okay to eat more than 1 cup of cauliflower a day? I know it's on the one cup list, but really the carb count would be low on it about 3 per cup. I like to eat raw cauliflower and cold diced up chicken breast dipped in Ranch dressing for lunch, especially during the hot summer so I was just inquiring. I also like Jicama, I'm not saying I would only eat cauliflower everyday allday, but just wondering if it would be okay to have more than one cup if I needed or wanted to sometimes.

Hi! You can have two cups of the "salad" veggies plus one cup of "other veggies." I do not have the book with me, but just check to see which list califlower is on and then follow that.

Stick to the limit of one cup of cauliflower for the 2 weeks of induction then move to the first rung of the OWL ladder. Then you can add a whole 5 net carbs of cauli or any other veggies!!
I stayed on the veggies rung for several months and added several 5 net carbsworth of veggies so know that my body can handle quite a few servings of them if I want. Dr Atkins suggested we would be eating 8-10 'servings' of veggies a day by the time we reach maintenance phase!
So much for the 'I couldnt do Atkins as I like vegetables too much' statement many non-Atkineers bleat at us when telling us Atkins is unhealthy! Most of us if we follow Dr Atkins rules are eating more vegetables than the 'government guidelines' even on the most restrictive phase of the way of eating.

I agree with Elizellen. Induction Phase is 2 weeks. If you think the Induction foods list is too restrictive, then on Day 15 move onto the On-Going Weight Loss (OWL) Phase.
Jicama is a 'salad' vegetable. So you can have at least 2 cups of that daily during Induction.~Megs~
