  • Italian Meatballs N Sauce



    I was CRAVING something Italian today so here is what I came up with...it is all Induction friendly as best I can tell.

    Italian Meatballs N Sauce

    1 lb ground beef, ¼ c. onion, 2 oz. mozzarella cheese, ½ tsp. Italian seasoning, salt and pepper. Mix up and form into balls. Place on a cookie sheet that you have sprayed with Pam or oiled up. Let them cook at 350 until they are done. It took about 25 minutes for mine, but the size of the ball will determine cooking time. When they are done, put them on paper towels to drain off the grease. Then, take ¼ c. Hunt’s Tomato Sauce with garlic and oregano (2 carbs per ¼ c.) and put over the portion you want. I just microwaved it for 45 seconds to warm the sauce and it was a little Italian in my induction day!

    As long as the tomato sauce has no added sugar (it will have the natural sugars from the tomatoes in it) it looks like a great 'legal' meal!! Well done

    BTW if you cant find a sauce with no added sugar you can make your own using tomato paste or chopped canned tomatoes (check for no added sugar) and herbs.

      Actually, I found a brand with no added sugar at my little country store...I was so surprised.

          Thanks, Deb! I've copied your recipe & put it on my hit list for supper tonight. VERY creative with the mozzarella cheese IN the meatballs!
