I just took 3 eggs, a glob of real mayo, a half-cup of chopped celery, a splash of dijon mustard, salt & pepper and mixed it all up for egg salad. It was kind of blah. How do you guys make egg salad more zingy? For someone who mostly used to eat out, I'm a really BAD cook.

I sometimes add a little chopped pickle or relish. (Dill only no sugar added). A few drops of hot sauce will give it a little kick. Scoop it up with pork rinds for a little more flavor.
I also like tuna/egg salad. Just mix both. Its a little less blah~Lauren~

we've always used white vinegar in ours just got to be careful because you can over do it but it does give it a zing!
We are simple people though we just add eggs, mayo, vinegar, salt and pepper.

Yep...try mustard and dill relish and some Louisiana hot sauce. The mustard will make a huge difference.
My basic ingredients for tuna salad, shredded chicken, or devilled eggs:
mayo
mustard
dill relish
greeen onion
celery
salt
pepper
optional:
Louisiana hot sauce
fresh jalapeno
Just mix 'em up until you get the "right" consistency and flavor for the way you like yours.

I'm with Hopeful on this. A little bit of vinegar or lemon juice brightens the flavor of egg salad, tuna salad, chicken salad, etc.
One of my favorite veggie dip is mayo, mixed with a little lemon juice or vinegar and a bit of onion powder. It's great with artichokes, raw snow peas, bell peppers, cucumbers etc.~Megs~

My Saturday shopping list looks weird: dill relish, green onions, white vinegar, onion powder, pork rinds, pepperoni, swiss cheese. Grow my own veggies in the garden in the back yard so that's all taken care of. Megs, the veggie dip sounds interesting and I'll try it with fresh zucchini strips this afternoon. My, the variations are endless and so different! Thanks all.Kate

I just made a big bowl of chicken salad, to put in lettuce cups and sprinkling a little curry powder on the top really added a different flavor. The way I made it is virtually carb free, since the chicken is free, I used .78g of celery, .24 grams of green onion, mayo, dijon, salt and pepper. Will be a nice snack for lunches, or in between meals this week. I may do one with a little hot sauce, that sounds good.

I Second the idea for using curry powder. Spice it up. You can give it a Southwestern feel by adding cumin and chili powder too.
I like adding veggies like chopped onion, pepper, celery to add interesting flavor. I also use pork rinds for dippers, but I really like sliced jicama to convey the salad from plate to mouth. Yum.~Joy
