    Hi All - I'm doing induction strictly by the book but had a question on the note regarding processed meats:

    "**Processed meats, such as ham, bacon, pepperoni, salami, hot dogs and other luncheon meats and some fish may be cured with added sugar and will contribute carbs. Try to avoid meat and fish products cured with nitrates, which are known carcinogens. "

    If the package says 0 sugar and 0 carbs, may I safely assume that it's ok to eat? I tend to use salami and pepperoni as snacks in between meals with slices of cucumber, but I end up having some each day. Is that ok?

    Read the ingredients on the label. Due to the non-existent carb labelling laws in the US, manufacturers can legally label something with 0.99999 grams sugar as "less than one gram" or "0". That might not make a difference if you limit yourself to 1 serving as listed on the package, but if you eat 5 or 10 servings, you'll be eating a significant amount of carbs.

      yeah, i just figured that out today with some salami

      ah well...lesson learned

        Thank you for your help! So for safety's sake, I should count each serving as one carb? Including something like tofu (my Trader Joe's extra firm tofu says it has no carbs per serving) - but I should assume they mean .99999 of a carb per serving, yes?

          yup... agree with all.. you should look for nitrate-free luch meats and bacon on a health store.. that's your best bet.. but I've found that meat and pultry are more satisfying .. sodium is a major issue.. remember that menstrual period tends to make us ladies gain water weight and sodium should be watched all month-long.

            Nitrate free meat is very hard to find.
            Just check the ingredients, almost all bacon here has nitrates and it's totally fine to have.
            Just don't buy stuff that has added sugar, honey, etc...
            Roast a chicken! So delicious and good for you.
