    Hi Everyone,
    My name is Carrie and I am completing my first week of Induction tonight. Yay!!! I have not cheated and I'm ready for my second week!

    I decided to celebrate by making this legal sweet treat. Honestly, it's pretty good---the flavor is def. there! Only 3.9 carbs. I found it on the ADBB board but don't remember where so I can't give credit (sorry to the author). Are you completing your first week too? Enjoy!
    I estimated 2 oz. of cream cheese b/c I don't have a food scale. Does anyone know how an ounce of cream cheese can be converted to teaspoons or tablespoons?

    Mock Danish
    one serving

    2 oz cream cheese (2)
    1 large egg, beaten(0.6)
    1 packet Splenda(1)
    1/2 teaspoon vanilla extract(0.3)

    Put cream cheese in a small, microwave-safe dish. Microwave on high for about 1 minute or until softened. Remove from microwave. Stir in the egg, Splenda and vanilla extract into the cream cheese. Put back into microwave and cook on high for 2 minutes.

    Total carbs: 3.9 grams
    Fiber: 0 grams
    Net carbs: 3.9 grams
    Cheese allowance: 2
    Sweetener allowance: 1

    *Note: Cream cheeses vary in carb count. So be sure to check your packages. Also note that some people add a tablespoon of fiber supplement to their Mock Danish to give it a more "bready" (sturdy) texture. Adjust the carb count accordingly.

    Dr.s scale: 163/156-Day 18
    Startover date: 9/17/07. Weight is 155. Goal is 135
    Startover date: 1/19/08 Weight is 162. Final goal is still 135.
    Startover again date: 6/7/08 Morning weight is 168 (home scale). Same final goal=135 or size 8 whatever happens first!

    1st mini-goal is 159
    2nd mini-goal is 155
    3rd mini-goal is 150- I will schedule a massage
    4th mini-goal is 145
    5th -mini-goal is 140
    Final goal is 135--hope to meet by 8/7/08

      Oh I've tried this danish, it's amazing how it turns out! I like to keep some of the cream cheese back and mix it with a bit of Splena and cinnamon then use it as frosting on top of the danish. I always thought there was 2 tablespoons in an oz, but apparently that only really works for fluids, so I think your best bet would be to get a kitchen scale and weigh it. Because of the difference in density of solids, you could be using too much if you do that for everything. Maybe someone else will have a better suggestion though.

        If you are buying cream cheese in a foil pack or tub you can divide the pack into ounces fairly easily by drawing a knife across the opened block to indicate half, quarter and eighths of the pack. So if it is say 8 ounces in a pack one section is one ounce
