Veggie Question

  • Veggie Question

    I'm not too fond of salad, and quite honestly I rarely buy any. The first time I did induction I ate three cups/day of other veggies like green beans, cucumbers, asparagus, etc.

    Is that okay or was I doing it wrong?

    You dont have to eat lettuce as your 2-3 cups of 'salad vegetables' if you dont want to.
    I sometimes wish Dr Atkins had called the 'salad veg' list something else like the '2-3 cup' list as many people assume 'salad' = lettuce!!

    Look at the 2-3 cup list and you can see many other vegetables including cucumbers. My usual '2-3 cup' veggies were red/yellow peppers, radishes, celery & cucumbers!

    As well as 2 cups of that list you can have one cup of green beans as your 'other vegetables' too!

      Ok I just got the book today.....so don't shoot me! HA HA

      If I don't want salad either, I can use the peppers and onion to cook with and count that as my one cup then have celery with cream cheese and count that as a cup.
      then have spaghetti squash and have that be my 3rd?

        Sounds like a plan - but onions are on the 'one-cup' list as well as spaghetti squash.
        Chives are a 2-3 cup veg though and would impart an oniony taste.
        well done on getting the manual it is a good read and will help you understand the theory behind the WOE.

          Ok so if I do 1/2 cup of the onion(before cooking) and 1/2 cup of the spaghetti squash I am all ok??
