Induction...party snacks?

  • Induction...party snacks?

    I do a lot of entertaining, so I'm always looking for snack ideas.

    Last night I served:

    -Slices of low-carb Deep Dish Pizza (crust made of egg, cream cheese, parmesan, mozzerella)

    -Ham, cream cheese, pickle roll-ups

    -Spinach dip with bell peppers for dipping

    -Deviled eggs

    Does anyone know if the red and yellow bell peppers are induction safe?

    Also, does anyone have any party snack recipes they'd like to share?

    a favorite in my house is celery with cream cheese and roasted jalepano's with cream cheese.

      oh i forgot about jalapenos! i used to make them with cream cheese, wrap them in bacon and bake them! thanks!!!

          Hot wings are sort of a classic party food, if a bit messy.
          Small meat balls on toothpicks are easy and fun.

          Linda's site has some great snack food recipes, the ones with asterisks are induction friendly. I've had the Korean Meatballs...mmmm good.

              here ya go!

              DEEP DISH PIZZA
              4 ounces cream cheese, softened
              2 eggs
              1/4 cup parmesan cheese, 1 ounce (I used the kind in a can)
              1/4 teaspoon oregano or Italian seasoning
              1/4 teaspoon garlic powder
              8 ounces Italian cheese blend or mozzarella cheese, shredded
              1/4 cup pizza sauce
              4 ounces mozzarella cheese, shredded
              Assorted toppings: pepperoni, ham, sausage, 4 ounce can mushrooms, green
              peppers, bacon, ground beef, etc.
              Dash of garlic pepper or garlic powder and some Italian seasoning for top of
              pizza

              In a medium bowl, whisk cream cheese until smooth and creamy. Whisk in eggs
              until mixture is well-blended and smooth. Add the parmesan and seasonings, then
              stir in the 8 ounces of mozzarella until completely moistened. Spread cheese
              mixture evenly in a well-greased 9x13" glass baking dish or lightly
              greased and lined with parchment paper (see note below). Bake at 375º 20-25
              minutes or until evenly browned, but not too dark. Let cool completely on a
              wire rack. When nearly cooled, take a metal spatula and carefully pry up the
              edges to loosen from pan. Ease the spatula under the whole crust to loosen.
              Keep crust in the pan. This makes it easier to remove the finished pizza later.
              Refrigerate, uncovered, until shortly before serving time.

              Spread chilled crust with pizza sauce, then cheese and toppings of your choice.
              Lightly sprinkle with seasonings of your choice. Bake at 375º about 15-20
              minutes or until toppings are bubbly. Let stand a few minutes before cutting.

              Makes 8 servings
              Can be frozen

              Per Serving: 304 Calories; 25g Fat; 17g Protein; 3g Carbohydrate; 1g Dietary
              Fiber; 2g Net Carbs

              the spinach dip was store bought, i think next time i'll make it myself or possibly use a different brand though. last night's had water chestnuts, which i hate.

                Ramaki.... Bacon wrapped water chestnuts.

                Smoked trout mousse on endive leaves.

                Baby back ribs... Baked with salt, pepper and rosemary

                Sliced smoked pork tenderloin.

                Miniature Crustless quiches... Mix eggs with cream, fried bacon and caramelized onions.. chopped chives, pepper.. Don't need much salt.. it will come from the bacon. Grease mini muffin tins and bake.

                Fricadilla... Danish meat patties.. They normally have some flour in them but you could substitute flax. Combine ground beef, turkey, egg, cream, beef broth, a table spoon of flour, grated onion, salt pepper and capers. Put in enough liquid to make the mix the consistence of soft jello. Then spoon in oval spoonfuls on to a griddle slathered in butter. Fry until very dark brown/black... Serve cold or warm. You can serve them with dark bread for others but the adkins people can just eat them from a tooth pick.

                caviar with cream fresh or sour cream , sliced red onion on endive leaves.

                Buy small mini bell peppers cut in half and stuff them with meat-loaf mix. ( leave out the bread crumbs) and bake them...Use sugar free tomato past instead of ketchup on top. To give it the taste of ketchup put it in a bowl and add a little splenda and white vinegar.

                Sliced cucumber stuffed with cream cheese

                Mellon balls wrapped with Ham... ( after induction and when you are at that stage)

                smoked salmon rolled with herbed cream cheese..

                Sliced Fajita beef served hot from the grill on a stick along with onion, bell peppers.. Toped with fresh lime juice

                Crab stuffed mushroom caps....

                Shrimp cocktail... Served with fresh salsa or homemade cocktail sauce..

                Tomato paste (sugar free)
                white vinegar
                splenda
                chopped dill pickle
                salt pepper
                horseradish
                lemon juice


                Mini tomatoes, stuffed with herbed cream cheese.. Mix cream cheese with Italian herbs sprinkle with parmesan cheese and broil until cheese browns. But be careful that the tomato doesn't get soft.. you want it to still be firm.

                Miniature grilled artichokes served with savory butter dip

                That's off the top of my head.. need recipes.? Just ask...

                    I'm not one who uses recipes with set amounts..

                    But basically I will use one egg per person. 1/2 strip of bacon per egg and about one 1/2 med onion per 6 eggs. OH!!! I forgot that I add shredded Juarlsburg cheese to this too.
                    Crisp the bacon and brown the onions with it. Then I pour the bacon, onions, chives(about 1/2 handful per 6 eggs) into a bowl. I whip it all together and add cream to get a consistency I like. Then I add about 1 to 1.5 cups of grated cheese to the mixture. Salt and pepper . I grease muffin tins with bacon grease or butter and pour the mixture in to about 1/2 to 3/4 full. They will puff up as they cook. I bake at about 325-350 until they look done. I test like you would cake.

                    Before adkins I used to make this and pour the mixture into muffin tins lined with Crapes... They were lovely for a guest breakfast served with fresh fruit.

                        Hey all really good cooks just throw stuff in and smell.. don't even need to taste! Just smell!!

                          OMG, that looks FANTASTIC!!!!!! WOW!
                          Too bad my hubby can't cook....well, ok, frozen pizza doesn't count, does it? LOL! I remember when we were first dating, I had to go to work and I was running late. He tried to make me a chicken salad to take with me. He popped the raw chicken breast in the toaster over to cook it! LOL!!!! Needless to say, that didn't work so well! But I guess he tried, right??

                            YA, cooking was a big part of our dating.. I'd cook for him and then he'd cook for me.. We'd try to out do each other.. Then we gave up and just started cooking together. It's fun... We stand in the kitchen and talk about the day.. He drinks wine and I drink sparkling water and lime. Then we start cooking... he'll usually make potato, rice or pasta for himself and I'll skip that dish... Since I'm on Atkins and he's not.

                              One of my favorites, and I think I may have come up with this myself, is sausage balls, made with low carb\induction friendly flour. Cheese doesn't effect me, so they are one of my favorite snacks for all stages of the low carb diet. I've always used the Atkins Pancake mix, but there are others that are "induction friendly".

                              There are many variations of the recipe, but the basic contains sausage, cheese, and Bisquick substitute,baked at about 350 degrees. My typical recipe uses a higher ratio of sausage.
