I am wanting to start Atkins again, this will be my second time. Last time I did it, I ate alot of pork rinds, few if any daily vegetables, and went off approximately 10 days for one day. My diet sucked as I didnt cook much. Believe it or not, i settled for the canned potted meat and pork rinds as acceptable. Im trying to find a meal plan that is simple and that I doesnt consist of alot of ingredients I have to go to a specialty store to get. Any ideas where I might find a good menu?

You don't have to be a chef to make this enjoyable. Keeping it simple works just great. It's so easy to make an awesome salad with an array of legal salad veggies. I put a bunch of them in like peppers in different colors (red & yellow), cucumber, spring onions (less carbs) yellow squash & zucchini, on top of several kinds of dark greens. It makes the salad attractive to look at as well as eat. It's so easy to stir--fry up those same veggies. I stir-fry the squash with different color peppers and add some broccoli, in some extra virgin olive oil and some butter, and oh, my is it awesome. Cabbage is so easy to cook. Frozen broccoli floretts are easy to nuke and then just add some butter. You can use cauliflower and turnip to take the place of potatoes in recipes.
As far as meat. I bake it, grill it, boil it and roast it. I put a Purdue oven stuffer roasting hen in the oven yesterday and now I have something quick and delicious for a lot of meals. Same with a roast beef. Marinating chicken breasts in Italian dressing for a while, then either grilling or baking is awesome. How hard is it to make hamburger patties??? Or, plop some boiled eggs or chicken on top of that salad and you've got an entire meal ready to eat in minutes. Yum...I'm making myself hungry!

Sit down with a copy of the Induction Acceptable Foods list. Then look at the foods on it. Some of the vegetables require little cooking/preparation. For example, most of the "salad" list can be eaten raw. Some of the vegetables on the "other" list come canned and require opening the can, draining/rinsing, then eating. You can buy frozen legal vegetables, and they are a breeze to cook in the microwave. Same for fresh some vegetables: asparagus, green beans, broccoli, cauliflower, are easy to cook in the microwave.Originally posted by tulsanurse1I am wanting to start Atkins again, this will be my second time. For meat, you'll need to set some time aside for preparation. I cook in batches on the weekends, or I toss food into a crockpot and let it do the cooking for me.~Megs~
