Baked pepperoni - until brown and crispy. I let those cool, keep in the fridge and they are like spicy little chips.

Also baked cheddar cheese - they taste like cheese nips a bit.

I always have both of those handy for when I need a snack

Something I want to try but haven't yet, is making baked cheese with a Mexican blend, and then making home made salsa for dipping, sounds good, I just got to make it. Anybody have a recipe?

I'm still new here and I'm waiting on my Atkin's book...are pork rinds allowed during induction?

Thanks for all the ideas. Keep 'em coming.

Yes as long as they are plain. Some of the flavored ones contain sugar.

We have two flavors that don't have sugar: Hot & Spicy and Salt and Vinegar. The strange thing about the Salt and Vinegar, which I love, they have less sodium than the plain!

I'm not much of a snacker, but since fat really fills you up, I eat boiled eggs with a bit of mayo and salt and pepper. I love cucumber slices or celery with cream cheese. YUM!

One of my faves is putting mozzerella on tomatoe slices with garlic and pepper, then broiling in the oven until hot and bubbly. OMG, they are so yummy!

Italian salami topped with cheese and microwaved for 45 seconds. It taste like pizza (chips). This is what go me through induction.

Is Turkey pepperoni acceptable at this point. I had regular pepperoni in the house, ate some then read some place that dextrose was a no-no. YIKES!
I'm still looking around for snack with fat. Will be looking for those Salt & Vinegar Pork Rinds today.
Still waiting on my book from E-Bay. I appreciate all the help and suggestions so far.

                              Re: Snacks?

I would make quiche muffins ahead of time and keep them in the refrigerator. It is a crustless quiche recipe in a muffin tin.

This recipe will be 6 "Egg Muffins". They are quiche-like in consistency. My husband and I both enjoy them.

                              6 well beaten eggs
                              1/4 cup cream
                              1/8 cup iced water
                              1 teaspoon parmesean cheese
                              pepper to taste
                              Mix together thoroughly.

Mound no more than an 1 heaping tablespoon of grated cheese in each of six sprayed muffin tins. (Tip: Home grated cheese goes further than pre-grated, packaged cheese.)

Add crisp bacon or diced ham, sausage, peppers, spinach, mushrooms or left over veggies to muffin tins topping cheese. Pour egg mixture over cheese and "toppings".

Bake at 350 for 15 minutes. Can be refrigerated and warmed up later.

When you are alone in your head, you are in a bad neighborhood.
