Bought a can of pumpkin to try the mock danish with pumpkin... not loving it. So, wondered what else I can do with the canned pumpkin. I'm on induction.
Thanks. I also posted this on the recipe forum - hoping for a response somewhere.

How about a pumpkin omlette? Here's the recipe.

        Pumpkin omelette

        2 eggs
1/4 cup canned or fresh cooked pureed pumpkin
        1/2 tsp vanilla extract
        1/4 tsp maple extract
        1/2 tsp fresh ground cinnamon
        pinch of ground ginger
1 tbl (give or take) DaVinci Caramel syrup
1 oz cream cheese cut into tiny cubes

beat the eggs, pumpkin, vanilla, cinnamon, caramel syrup well together pour into a preheated over med high skillet with a pat of butter in it cook until almost done and ready to flip ... add the cubes of cream cheese and fold it over with a very easy hand....cover and remove let stand until the inside is completely firm....

I serve it with a dollop of whipped cream and a sprinkle of fresh grated cinnamon

        There's also:

        Sicilian Pumpkin Soup

1 link Italian sausage (or you can use 3-4 oz. of bulk pork sausage
10 slices Pepperoni, quartered (use more if you wish)
1 cup pumpkin (I used canned pumpkin)
        2 cups chicken broth
        2 Tbls. chopped onion
        1/2 tsp. Oregano
        Black Pepper to taste optional

Remove the skin from the Italian sausage. Crumble into small soup pot and cook until browned well, drain off grease. Add everything else except pumpkin. Let simmer for about 10 minutes. Add Pumpkin. Simmer until hot. Serve.

I browned the sausage and pepperoni first, remove it from the pan, then the onions and garlic, sauteed the onions in olive oil with garlic powder . I also simmered it for about 30 minutes after adding the pumpkin instead of 10 to make sure everything melded together and the pepperoni got cooked. It sounds strange, but it's really good. Enjoy

Hope that helps with some ideas for pumpkin.

Another use for the leftovers would be a "pumpkin cream sauce" to serve over chicken.

          1 cp cream
          1/4 cp pumpkin puree
          pinch nutmeg to taste
          shredded parmesean cheese
          S&P to taste

Add everything together in a medium saucepan and reduce until cheese is melted, longer if you want it thicker.

I sautee veggies and then pour this on top.
          Should serve four.

          Happy Cooking!

Looks great but remember the limits on cream for induction! One whole cup is a lot over the limit if it is for one serving!!
Wondering how to get 'most' of your net carbs from your induction veggies?

                  Re: pumpkin question

I use it to make a "crustless" Pumpkin pie. I follow the recipe on the can except that I leave out the sugar and substitute Splenda.
