One thing that I had a hard time with last week was taking my lunches to work. But I had a micro so I just brought rolled up lunchmeat and leftovers from dinner. Next week I start a new job and I won't have a fridge or microwave! I have no diea what to bring as lunchmeat wrapped cheese is getting old. I would love any suggestions or links of induction friendly lunches that don't need reheated.

I keep a can opener at my desk for tuna fish cans.
You can get cooked chicken, sardines and salmon in the can for emergencies.
Are you allowed to go out for lunch or you must stay at your work as that would limit your choices.

Do you have a mini-cooler? Mine is soft sided and collapses down to nothing when it's empty. The reason I ask is that when I started induction, I was on the road alot and my little cooler made it possible for me to stick to this. One thing that I kept in my cooler was raw cauliflower, brocolli & cucumbers - and little tubs of ranch dressing that they sell in the produce section. Believe me it wasn't as satisfying as a hot lunch, but it's amazing how quickly you can get used something new! I did the rollup things too - but I got tired of them pretty quickly. Then I played around with those nasty cheese & beef sticks that they sell at gas stations. The ingredients & age of the things are both questionable so I gave them up pretty quick! By the time I was totally bored my work load changed, and now I'm at the office 95% of the time thank goodness.

Hey, don't just think soups with a thermos. One things I do is boil up a couple of sausages (found some great ones with no fillers/nitrates/sugar), put a couple of them in a thermos and fill the rest of the space with the hot water. It's so quick and easy and they are still nice and hot when lunch rolls around.Grant

Grant is correct. You can put whatever you want into a Thermos bottle: scrambled eggs, meat and faux-tatoes, etc. A wide mouth bottle will be a bit more convenient though...~Megs~

My staple for lunches is salad. I usually put a can of albacore on a cup of greens with some ranch or lemon. It's boring but easy and healthy. Or I put whatever left over meat I have from dinner on top of my salad.
Or meat/cheese roll ups is yummy. Or eggs... I make this scrambled egg stuff - I think Cleo used to call it 'Slap yo Mama Scramble' cause it was so good.
It's just eggs, meat - wahtever kind you want, cheese, veggies - whatever you want. I lOOVE it cold... and I LOVE cold omletts waay better than hot ones.
Anyway, really the sky is the limit when it comes to yummy cold lunches. I try not to eat out too often but when I do I'll grab a bunless burger or a salad.♥Started Atkins on December 8th, 2005
