Fitday shows 1 cup of pumkin as having 19.8 Carbs, with 7.11 Fiber. So even if you make this dessert=1/2 cup pumpkin, a tbsp butter, 1 splenda, and 1 tbsp heavy cream, the carb count is still huge. How do you guys get this dessert to be low carb. I was under the assumption it was Induction friendly.

Pumpkin is a very nutritious vegetable. So in my opinion, it's worth eating because you get alot of nutritional benefits for that amount of carbs. As opposed to lettuce, which has almost 0 carbs and almost 0 nutrients.~Megs~

Pumpkin is absolutely okay on induction and I highly recommend for people to use it. (I didn't, but wished I had). It has a lot of fiber, is yummy and nutritious.
Do NOT BE SCARED of carbohydrates, especially those in the form of nutritious vegetables like pumpkin!! Atkins is a low carbohydrate, not NO carbohydrate. Your body, I think you'll find, will do MUCH better at the higher end of the 20 net carb limit if you are getting those carbs from VEGETABLES (especially the "higher" ones like pumpkin, jicama, brussel sprouts, etc.) instead of from eggs, cream, cheese, olives, and the other "special category" foods.
What I've learned (just recently, mind you) is that we get so caught up in this carb phobia that we limit our vegetables, but somehow justify eating "carbs" in the form of sour cream, cream, cream cheese, olives, and stuff like that.
Maybe, just maybe, Dr. A did a little bit of disservice by limiting vegetables so strictly during induction (by cups) because it sets a TONE or gives an impression that vegetables are to be restricted (for the duration of the diet). Then, he doesn't go into enough detail or get descriptive enough when he talks about adding vegetables back during the Ongoing Weight Loss phase.
And, then, the recipe guides don't help allowing shakes, bars, breads, etc. but limiting the vegetables once again (for induction phase)...

That's a very insightful comment, Joy. And a very truthful one at that. I've reviewed countless menues where folks are using all 3 sweetener carbs, all 4 cheese carbs, the max amount of cream carbs, but restrict their vegetables to 2 cups of lettuce. Or they eat 1 cup of lettuce and get nervous when they're advised to drop their Atkins bars and eat more vegetables!Originally posted by ValidRouge

Veggies are good carbs because they are generally nutrient packed with vitamins, minerals and fiber. I don't mind "blowing" 5 carbs on 1/2 cup of pumpkin or on a cup of tomatoes because I know those veggies have higher nutritional value (and therefore more healthful for my body) than 3 packets of Splenda and 2 tablespoons of heavy cream.~Megs~
