I love mushroom. I cooked a mushroom soup during my induction and was really good. All you need to do it boil 1/2 cup of mushroom in 1 cup of water and salt (I don’t put much salt in there). After the mushroom is cooked, switch off the stove, grind the mushrooms and then add some butter and olive oil in your preferred quantity and stir.

Very easy to cook and delicious. Depending on the mushroom type (I use regular white mushroom), 1 oz of boiled mushrooms contains 1.5 carbs, 0.6 fiber (0.9 net carb) and 0.9 Protein. Count your carbs accordingly.

Cavgirl - we have a real gem of a ready made low carb soup in Ireland, it's a staple in my diet. Cully & Scully Mushroom soup. It's available in EuroSpar/Dunnes/Superquinn - it comes in 400g bowls and is very low carb, can't remember the exact amount but it's low. Only the mushroom soup though - the others are a bit higher, though I think the tomato and basil isn't too bad either.

It is really tasty and filling, all natural ingredients including cream. I eat a whole bowl for lunch if I'm short of time - zap it in the microwave and you are good to go.

I love it too - and used to eat their pies also, yum yum yum. Course I don't eat them anymore - but I have a house full of their little ceramic bowls

BTW if it's Dunnes you are shopping in look out for another great find - Paul Rankin Irish Pork Sausage. Great BIG delicious suasages that don't shrink when cooked and have about 2g of carbs each. One is easily enough at breakfast.

Dunnes also have a great offer on Splenda at the moment - half price on the biggest size, 125g. I think it was 2.60 or something like that.

I live on Linda's Cauliflower Bisque and Emerald Isle soup. Make your own chicken broth and they are even better! Lots of veggies and they are so good for lunch.

Yea.. just remember.. If you cook that soup in chicken or beef broth rather than pure water, you will get hocked It is real tasty.
