  • Christmas Eve Snacks!

    My entire family is coming to my house Christmas Eve and we are doing "snacks". Well I need some good INDUCTION friendly snacks.

    I know this needs to most likely go on the cooking boards but this board gets more traffic on induction issues. If the powers that be need to move it, that is ok too!

    FYI, I am feeling better. Still haven't got that burst of energy but I am not feeling AS BAD.......Thank Gosh!!!!!

    How about: Cheese and pepperoni, Nuts if you are the right rung, pork skins, a veggie tray (cucumbers or celery), Mushrooms stuffed with sausage (just pull out the stem and add ground sausage, bake in oven). You migh want to check out http://genaw.com/lowcarb/ Good Luck and Merry Christmas.

    1-Atkins WOE/WOL plan works
    2-I need to always work on the behaviors and triggers that make me over eat.
    3-Atkins WOL is part of the puzzle, but is not the entire thing.
    4-Self-deprecation only feeds our inner ego and not in a good way.

      Deli ham spread with softened cream cheese, rolled up and cut into 1-inch sections for a pinwheel. If you can find Mt. Olive sugar free (Splenda) Sweet Gherkins, spread a small piece of deli ham with mustard and wrap around the pickle. Veggie tray with Ranch dip. Olive and pickle tray. Crab Stuffed Cherry Tomatoes. The Hickory Farms summer sausage doesn't have sugar, so I make a tray of slices of the meat stick and cheese. Jalapeno poppers, parmesan cheese puffs, mini crustless cheesecakes, crab dip with pork rinds to dip with. I have lots of dessert stuff, but you have to be on rung 3, nuts, to eat them.

      Crab Stuffed Cherry Tomatoes



      1 pint cherry tomatoes (24)

      1 tablespoon olive oil

      2 scallions, finely chopped

      1 rib celery, finely chopped

      1 clove garlic, minced

      1 6 ounce can white crab meat, drained and flaked

      1 tablespoon chopped fresh parsley

      ½ teaspoon dried tarragon

      ½ teaspoon salt

      ¼ teaspoon pepper

      1 package (8 oz.) Neufchatel Cheese or regular cream cheese, room temperature



      Cut off tops of tomatoes, scoop out seeds and discard. In a skillet, heat oil over medium heat; add scallions, garlic and celery. Cook for 3 minutes, stirring continuously. Stir in crab meat and spices. Transfer to a bowl and beat in cheese until smooth. Spoon into a plastic bag; cut off corner and pipe into tomato shells. Refrigerate until right before serving, but allow to come to room temperature when serving.





      Spicy Stuffed Mushrooms










      1 pound small to medium fresh mushrooms (about 30)

      ½ pound bulk hot or regular sausage
      ¼ cup chopped onion
      1/3 cup Heinz One Carb ketchup
      2 tablespoons finely crushed pork rinds
      1 teaspoon dried parsley flakes



      Clean mushrooms and remove stems. Finely chop enough stems to measure ½ cup. Crumble sausage in a large skillet; add chopped mushroom stems and onion and cook until sausage is browned, stirring frequently. Drain excess grease; stir in ketchup, pork rind crumbs and parsley. Fill each mushroom cap with mixture; place in a 3-quart baking dish. Bake in a preheated 375°F oven 12 to 15 minutes.


      Jalapeno poppers


      15-20 fresh jalapenos, halved, seeded and cleaned
      8 oz cream cheese, softened
      1 lb. sausage, browned and chopped fine
      1/2 C. parmesan cheese

      Mix cream cheese, sausage & parmesan cheese. Stuff jalapenos and place on shallow pan. Bake in over at 400F for 10 minutes or until done.




      Parmesan Cheese Puffs



      2 large egg whites, room temperature
      1 cup Parmesan grated
      1 pinch cayenne




      With an electric mixer beat whites until they hold stiff peaks. With a metal spoon, thoroughly fold in Parmesan and cayenne. Roll mixture into about twenty 3/4-inch balls.

      In a 3-quart heavy kettle heat 1-inch oil to 375°F. Working in batches, fry balls, turning them until golden - about 2 minutes. Transfer to paper towels to drain.

      Makes 20 Puffs at 0.5 carbs per serving.

          Sunny's ideas seem great, I've had really good success with jalapeno poppers. Also, don't forget about good ol' devilled eggs.

              cauliflower
              grape tomatoes
              cucumber slices

              If you are going to "over-do it" on ANYTHING this holiday, over-do it on vegetables! Low calorie, low carb.


              I have to second the jalapeno poppers. THOSE are fantabulous! LOL

                  Thank you for saying that! I made my Pickled Southern Greens yesterday, and you're supposed to wait four days to start eating them! I waited close to 24 hours, but I've already eaten half a jar. At this rate, I won't have any left to have with pork for New Year's. Those things are just too good!

                    Mozzarella with parma ham. If you can get those tiny grape sized mozzarellas they're good with a slit cut into them, and a small rolled up piece of parma ham (or speck if you can get that in the US) in there. If you can't get the grape sized mozzarellas, then roll small pieces of mozzarella in the parma ham.

                      YES amazing! I could never make enough for a group though. I can hardly make enough for hubby and I.

                      But I'd eat them all the time if possible.

                        Broiled shrimp and scallops wrapped in bacon!!! Also crabmeat stuffed mushrooms, chicken wings, meatballs, little crustless quiche.

                            There are lots of options ...

                            Do a tray with different cheeses, peparoni, salami (& Crachers for the Carb eaters)
                            veggie trays are great ... Make chicken wings ... stuffed muchrooms ... you could do shrimp (and cocktail sauce for the carbers).... meat balls ...
