  • Need a quick and easy breakfast

    Hello everyone! Long story short, I like to sleep as much as possible. Therefore I take my showers at night ... etc so I can pretty much roll out of bed, get dressed, and go to work. As many of you are probably thinking in your head, before this diet I did not eat breakfast very often. I start the diet tomorrow (Monday) and I know that breakfast is a critical part of the losing process. Therefore I would like a quick, yet fulfilling breakfast.

    All suggestions are welcome! Thank you.

    boiled eggs

    I boil lots of eggs and have them handy in the kitchen to just grab and go. Also, slice up a bunch of veggies so that you can grab those and go too.

      Make an egg dish ahead of time... cook your favorite veggies... ie broccoli, mushrooms, spinache, asparagus... what ever you love in eggs... enough to cover the bottom of an 8X10 dish... (don't forget to season them)... you could also put ham, or bacon, or whatever kind of meat you like in there too... then mix up about 10-12 eggs with a dash or two of cream and pour over the veggies/meat mixture... add cheese on top... bake at 350 for 35-45 minutes... til golden brown... and walla! breakfast for a week! just slice and put in baggies and then freeze or refridgerate til you want to eat it... microwave and kazam! instant meal!

        I usually have an egg Danish type thing... I warm up scramble eggs, cream cheese, splenda, and cinnamon in the microwave...yes I know I am crazy, but it saves a lot of time. Anyway...it is really good and helps to save a lot of time. Until you know how your microwave will do with eggs I would suggest watching it, and make sure to stire. Hope this helps.

          There are some great ideas in this post, like the baked eggs!

          I basically have boiled eggs, some veggies in a bag and some sliced cheese, if I am on the go, I try to remember to grab something like that for the morning.

            Well if you are the kind of person who would rather have a warm bowl of some sort of cereal or you just cant handle eggs in the morning then inhisgrip posted a really good 40 second breakfast recipe.

            1/2 cup canned pumpkin (not the pie filling) Libby makes 100% Pure Pumpkin
            1/3 oz cube of cream cheese
            1/8 teaspoon cinnamon
            1 packet Splenda

            Heat for 40 seconds, stir and enjoy!

            7 net carbs, full of fiber and counts toward part of your "other" veggies.

              I make like 6 boiled eggs and a pack of bacon so my breakfast for 3 days is done. All i have to do is nuke it. Try that. Boiled eggs are easy.

                When I was crunched for time on induction, I'd made single-serving egg "muffins" to take with me.

                1. Grease a muffin pan. Preheat the oven to 350.
                2. In a bowl, beat 8-12 eggs (depending on how large you want each muffin to be) and add seasonings/spices. You can also add a bit of cream if you like.
                3. In each muffin cup, place a slice of ham, a piece of sausage, or a slice of bacon in the bottom.
                4. Add the egg mixture to each muffin cup. You can also add chopped peppers, onions, tomatoes, salsa, etc. Whatever you like!
                5. Top with a small sliver of cheese or a small amount of shredded cheese.
                6. Bake for 15 minutes (watch carefully, ovens vary!)

                These are really good! You can make a batch for the week, store them in a ziploc bag, and reheat 1 or 2 for breakfast and it only takes a minute.

                    Leftovers. Leftover chicken. Leftover beef. Leftover pork.

                    When you have your evening meal, portion out your breakfast and lunch for the next day. Put them in a container and store it in the frig. It will be a "grab and go" type of meal.

                    But whether you eat leftovers for breakfast or boil eggs or fry up a pound of bacon or sausage, you'll need to make time to do these things.

                    Be sure to eat a combination of fats, proteins and carbs for your breakfast and other meals. The fiber from the carb will fill you up during the meal, while the fats and proteins will keep you from getting hungry between meals.
