hi everybody.. i just wanted to share my dinner with everyone bcuz i couldnt believe how yummy low-carbing can be 
we had chicken cauliflower casserole... so easy to make too!
brown 1lb chicken chunks in olive oil on stove, adding a tbsp of heavy cream to scrap up the brown tidbits..
shred or slice thinly half a head of cauliflower and lay it across the bottom of a 7x11 pan. add salt, pepper, parsley, basil, onion pwd.. any herbs/seasonings u like, then spread chicken out over top. pour 3 more tbsp of heavy cream over top, then add 1 cup of cheddar.. bake covered at 350 for 20 minutes.. so delicious!! it should serve about 5, and the recipe site i got it from said 5 carbs per serving!!
(P.S. my heavy cream grocery store label says it has no carbs, no sugar? is that right, i thought i read that you should count your cream as 1carb. im sorry for the millions of questions

im thinking next time about adding half broccoli and maybe some of yins have made this before but for the newbies like me, i (again) cant believe how yummy atkins can be! big big smile!!
also, since im posting, what exactly does is cow cheese? can i have provolone or not? im really enjoying my steakums, but ive keeping to cheddar just incase. not getting out the tape measure for another week but i dont want to screw anything up!!
