  • buffalo chicken dip

    after a very ong carb filled weekend, i woke up this a.m. feeling motivated and i had this revelation.... i wanted buffalo chicken dip but since i cant eat it on the tortillas it tastes so good on, im going to cut the chicken into bigger bite size pieces, as well as the celery. i used to put them in my chopper and dice 'em up so it they blended well into the dip. but this should make one very yummy meal, i hope.

    3-4 boneless skinless chicken breasts
    8oz cream cheese
    1cup ranch
    3/4cup franks redhot (any hot sauce really)
    2-3 stalks of celery
    about 1/2cup cheddar/jack shredded cheese

    cube ur chicken into bite size pieces, cooking in a large skillet or pot, adding ranch, hot sauce, celery (also cut into bite size pieces), and cream cheese til it's all blended together. (it helps to break cc into tiny pieces, it'll melt faster) one its all mixed up, blended well, sprinkle ur cheese on top and serve hot. or cold. either way its sooo yummy my mouth is watering. and u can refrigderate and eat for days afterwards. ill get back to u on the carb count.

    ok i figured the ENTIRE pot has a little less than 41 carbs in it with the recipe i provided, which is about 5 servings id think. im about 95% sure i figured this out right. (im my bottle of ranch there were 3carbs for every 2 tbsp, and theres 16 tbsps in 1cup. 16 divided by 2 = 8 servings times 3 carbs.) just incase u wanted to check my math.

    im putting mine in individual tupperwares so i can see how many servings a pot, and i think it'll be 8 carbs per serving. wow, this is confusing but its 1serving salad veggies, 2 servings cheese. but trust me, your taste buds will thank you. good luck!
