  • What do YOU eat for breakfast?

I don't know about you but I have burnt myself out on eggs. At least for breakfast anyway. Unless I can think of something more creative to do with them besides scramble, fry and boil and mock danish.

Yesterday I just had brunch for lunch, broccoli/cauliflower and chicken cubed up with a cheesy cream sauce. It was kind of late 10:30ish so it was my lunch too and I snacked before dinner. Not my best planned day

Today I was so desperate for something besides eggs I ate shrimp. I have got to get to the store to get more bacon.

What does everyone else eat for breakfast?

    Hello there,

You could have egg muffins. There are several ways to make them. I make mine with the following...
    5 eggs
    1/2 cup Heavy Cream
    1/2 cup crumbled cooked sausage
    3 oz of Gouda Cheese
All I do is grease a muffin pan, put in the crumbled sausage evenly in the six cups of the muffin pan and then mix the eggs and the cream together really good, and then pour evenly onto the crumbled sausage. The I chop the gouda cheese and just put some chunks into each cup. Then I bake for about 20 minutes. This is so good heated up in the morning, and because the cheese is chunky, you have gooey parts in the muffins, like alittle cheese surprise.

I also saw this but have never tried it, but it sounds wonderful. I don't like the mock danish, so I really hope this is good.

    Mix the following together:

1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
    1 Tablespoon butter
    1 Tablespoon heavy whipping cream
    1/4 Teaspoon pumpkin spice
    1 Packet of Splenda

Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy. (Note - heating times may vary slightly depending on microwave)

I put the extra pumpkin from the can in a bowl in the fridge for my next use.

BUT REMEMBER IF YOU HAVE THIS PUMPKIN TREAT, TO ONLY HAVE (2) CUPS OF SALAD VEGGIES FOR THE REST OF THE DAY.

Another thing you could have for breakfast is a BLT on a lettuce wrap.

Re: What do YOU eat for breakfast?

Think outside the "eggs for breakfast box". We have an ADBB member whose favorite breakfast is taco salad. We have another who likes cold, leftover pork ribs. If I eat an Induction-type breakfast it's usually leftovers---I like cold chicken with a bit of cheese.

Over the weekend, I watched a cooking show and saw the chef make a cheese wafer stuffed with potatoes. Of course, potatoes aren't Induction friendly, but I tried making that stuffed cheese wafer with leftover turkey and leftover cooked spinach: it was fabulous! I made it again for breakfast yesterday.

I posted the recipe for the cheese wafer in the Food/Chat section and in the Main Course Recipe section.

I never thought of that combo. That really sounds good. I am going to have to try that. It is funny how I never think of the simplest things I could do for breakfast.

Re: What do YOU eat for breakfast?

I eat whatever I feel like for breakfast. Same goes for lunch and dinner. Sometimes I eat chicken tenders and celery for breakfast. Sometimes I have an omelette for dinner. Time of day has no power over me. As long as it's a legal food, what do I care WHEN I eat it?

                Favorite induction-legal breakfasts:
*Pumpkin/cream cheese/cinnamon (or if you're hardcore, pumpkin with butter and cinnamon, no cheese or sweetener)
*green beans and 1 oz. cheese
                *chicken tenders and ranch
*fried "apples" (chayote squash) and sausage
*Scooter's sausage (do a search for the recipe, it's awesome!!!)
*egg "wrap" with mayo, cheese, bacon (spray pam on a plate, pour 2-4 beaten eggs onto it, microwave on medium for 5-7 minutes, the egg becomes almost like a wrap, and I just put my other ingredients in it and eat it like a breakfast burrito!)
                *broccoli slaw
*egg salad (made with mayo, mustard, celery seed, pepper, dill, parsley, garlic, onion, celery--you can eat this as is, or scoop it up with veggies or pepperoni or cheese "chips")
*roll-ups (choose deli meat of your choice, add cream cheese or cheese slice, pickle is optional, roll up and eat!)

Re: What do YOU eat for breakfast?

I love deviled eggs for breakfast. You can put anything (legal) in them like crumbled bacon. I once made a batch with a can of real crab meat. My next set is going to have a can of shrimp in them.

One of the best things though I ever did was make quiche. I put eggs, cheddar cheese, spinach, mushrooms and chopped bacon in them. I made them in muffins and I take a baggie of two right out of the fridge. I eat one for breakfast on the way to school then I eat one for snack.

Another thing is like a mini caprese salad just without the greens. Tomato slice, slice of fresh mozzarella cheese, chopped fresh basil on top the sprinkled with olive oil, salt, and pepper. Eat a few of those (but don't go over your 3 oz of cheeze limit!)

                            1 egg.
