  • okra??

    has anyone eaten this on induction, and if so, does it cause any stalls/effects, or is it a good source of veggies? I loveee fried okra, but wanted to check first

    I would say that as okra is a sort of fruit with seeds in like peppers it would be included in the 'salad vegetable' list so as long as you are not breading it or dipping it a batter containing flour etc before cooking it you would be fine!
    Wondering how to get 'most' of your net carbs from your induction veggies?
    Take a look at the thread from the latest Veggie Challenge to see how others manage it!

      i had this on induction like 3 times a week. i love okra, fried, baked, steamed, mixed with other veggies. mmmmmmm

        Vegetables
        You can have two to three cups per day of:

        alfalfa sprouts
        daikon
        mushrooms
        arugula
        endive
        parsley
        bok choy
        escarole
        peppers
        celery
        fennel
        radicchio
        chicory
        jicama
        radishes
        chives
        lettuce
        romaine lettuce
        cucumber
        moche
        sorrel
        These salad vegetables are high in phytonutrients and provide a good source of fiber.

        Other Vegetables
        You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

        artichoke
        celery root
        pumpkin
        artichoke hearts
        rhubarb
        asparagus
        chard
        sauerkraut
        bamboo shoots
        collard greens
        scallions
        dandelion
        snow peas
        bean sprouts
        dandelion greens
        spaghetti squash
        beet greens
        eggplant
        spinach
        broccoli
        hearts of palm
        string or wax beans
        broccoli rabe
        kale
        summer squash
        brussels
        kohlrabi
        tomato
        bean sprouts
        leeks
        turnips
        cabbage
        okra
        water chestnuts
        cauliflower
        onion
        zucchini
        If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

        A couple of years ago, I found a wonderful recipe (Induction friendly too!) for fried okra in a book by Mark Bittman. The recipe was developed by an Indian chef in NYC.

        Anyhow, you need fresh, raw okra. Slice the okra lengthwise (Bittman said this reduces the sliminess) into quarters. In a pot, heat up oil, like peanut or another oil that can withstand high heat frying. Then drop in the okra into the hot oil. Fry until the okra turns a light brown---watch it carefully because it can burn easily. Remove from the oil, drain on paper towels and season with whatever herbs and spices you like. The recipe in Bittman's book used an Indian spice mixture called 'chat masala' to season the fried okra.

          Good post, Megs - I looked and looked but just didn't spot the word 'okra' in either list
          gotta get my eyes checked maybe

          So one cup per day is fine on induciton.
