  • Pork Scratchings with Potassium Nitrate

    I bought some pork scratchings and only noticed when I got home that they have been preserved with potassium nitrate. Are these allowed, and are they going to make me stall? I remember reading that nitrates are bad in the book but not why.

    just finished reading that part last night in the book. nitrate is bad because it is a known carcinogen, which can cause cancer....i was kinda frightened to see that because the pre-cooked bacon i've been eating has nitrate in it as well....hope this helps....
