I noticed that in the Recipe Section there isn't a specific header for Breakfast Recipes, particularly Induction Breakfasts so I thought I would post some here, as I am creating my menu.

Baked Ham and Eggs Rosemary

1 1/2 cups diced cooked ham
2 10-ounce packages frozen chopped spinach -- thawed and drained
1/4 pound unsalted butter -- melted
16 California Fresh Eggs
6 ounces goat cheese
1 teaspoon crushed rosemary
Salt and pepper -- to taste
Preheat oven to 350º. Grease 8 individual baking dishes (large enough to hold two eggs). Divide ham into prepared dishes. Top with equal portion of spinach. Place 1 teaspoon melted butter on spinach. Carefully break 2 eggs on top of this mixture in each dish. Divide goat cheese into 8 pieces and place one piece on top of eggs; sprinkle with rosemary, salt and pepper. Top with any remaining butter. Bake 12 - 14 minutes until eggs are set.

1/2 cup water
OMELET FILLING
6 ounces sliced, cooked turkey breast
8 slices bacon -- cooked ( or use equivalent in crumbled bacon)
1 1/3 tomatoes -- sliced
Beat together eggs and water to prepare omelet mix. Refrigerate.
For 1 omelet, warm 1 1/2 ounces turkey and 2 slices of bacon.
Use 1 - 4 ounces ladle of omelet mix to prepare omelet. Fill with turkey, bacon and tomato.
Close omelet.

Prepare omelet open-faced. Arrange warmed, sliced, smoked chicken pin-wheel style over top and sprinkle with cheeses. Place under broiler to melt. Garnish with guacamole.

Preheat oven to 350º. Grease 8 individual baking dishes or ramekins. Combine all ingredients and divide between dishes. Bake 20 minutes or until center is solid and puffy.

Oh, yummy! Thanks for taking the time to go through your recipes and post them. I love spinach quiche recipes for breakfast...quick and easy to reheat too, so the fritta is my fav (they're all good, but this one's my fav!).

1/4 teaspoon dried sage
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 tablespoon butter
4 medium Roma or Plum tomatoes -- sliced
1 cup fresh basil leaves -- finely chopped
8 ounces cream cheese -- cubed
Whisk together eggs, salt, pepper, and sage/oregano/thyme. In large skillet, melt butter over medium heat. Sauté tomatoes one minute. Lower heat and add basil sautéing until limp, 1-2 minutes. Pour egg mixture over all and top with cream cheese cubes. Cover and cook over low heat approximately 20 minutes or until set on top; or cook until bottom is partially set and finish cooking top under broiler.

Break 4 eggs into large bowl. Separate other eggs, adding only yolks.
Pour 1T butter into eggs. Add sat. Beat with whisk for 30 seconds.
Place remaning butter in heavy, nonstick skillet. Place on LO.
When butter is melted, pour in eggs. Let them sit 2 minutes.
Pus eggs in flaps to other side of pan. Tilt pan so eggs rush to bottom. Rotate 180 degress, push flaps back. Serve

1 pound ground turkey breast
4 t sugar-free pancake syrup
1/2 t dried sage
1/4 t cayenne pepper
1/4 t salt
1/8 t ground ginger
1/8 freshly ground black pepper
1 t extra virgin olive oil
1 large beefsteak tomato -- cut into 4 slices
4 slices reduced-fat cheddar cheese
Heat oven to broil.
Combine turkey thru ginger in a mixing bowl and mix well. Divine into 4 (1/2 inch think) patties.
Heat oil in a large nonstick skillet over MED HI heat; cook patties until well browned and cooked thru, about 4 minutes, per side. Remove from heat.
Lay tomato in a single layer in a baking dish. Season with salt and pepper. Top each slice with 1 patty and 1 cheese slice. broil until cheese is melted, about 2 minutes. Serve hot.

12 eggs
2 tsp. Spike Seasoning
1 1/2 cup grated low-fat cheese
3 green onions -- diced
4 slices turkey bacon -- diced
Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray.
In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set.
