  • Please set the record straight for me about pumpkin

    Quick introduction. I am 5'6", 27 years, starting weight was 139, on day 7 I am down to 136. Goal weight 125. I work out at least 5 times per week, at least 30 minutes of cardio, and weights. I am still waiting for my book to get here .

    I know there are threads on this, but I am studying for midterms and don't have time to do a massive search.


    I am on day 7 of induction, just introduced pumpkin back into my diet yesterday (I loooove pumpkin and typically eat one large can of pureed pumpkin a week).

    So, in the conversion sticky it says 1 cup of pumpkin is approximately 116 grams. On the Libby's can it says 0.5 cups of pureed pumpkin is 122 grams. If I am eating 2 cups of lettuce a day, do I eat 0.5 cups of pureed pumpkin in addition, or 1 cup of pureed pumpkin? (Keeping all additional carbs adjusted to maintain 20g per day).

    Sorry I can't answer your question the exactly the way you worded it... LOL I'm kinda tired and it sounds complicated.

    I'll tell you how I did it - I use pumpkin A LOT. As you can see in my siggie, I have been dubbed the pumpkin princess. I use Libby's, too. I took the number of servings in the can and multiplied it with the nutrition facts for 1 serving to see what the facts were for the whole can. I eat a half can at a time, so I can calculate the info from my "whole can" facts.

    Here they are (for the WHOLE can)

    1.76 cups in a can
    31.68g carbs in a can; 17.6g fiber in a can - therefore, there are 14.08g net carbs in a whole can (carbs - fiber = net carbs)

    I eat 1/2 can at a time, which is .88 cups. That means a half can has 7 net carbs. You should always go by the label if there is one provided.

      mmm pumpkin....since you are the "pumpkin" princess lol I would like to ask you if you have a recipe for some sort of microwaved pumpkin concoction? like a minute muffin or something? or do you just chill it and mix it with cinnamon or something?

        Hi! I love pumpkin too and I think it's one of the best carb choices cause it's really high in fiber. Iusually make mine with cinnamon, a little heavycream, a dab of butter and a pkg or two of splenda. Then microwave till warmed through or heat on stove. It is like a custard
        or soft pumpkin pie filling.

            I agree with Mitzi. Additionally, the 2002 edition of the diet says you are allowed 3 cups of vegetables daily. Either three cups of the "salad" list vegetables or 2 cups of the "salad" list veggies plus 1 cup of the "other list" veggies. Pumpkin is on the "other list", meaning, it is limited to 1 cup daily during Induction---no matter what form (pureed or in chunks) it is in.

              Now I'm confused. I read the back of my Libbys' pumpkin and it seems way too high in sugar and carbs. Do I have the wrong kind? It's Libby's Easy Pumpkin Pie mix...10 servings per can at 1/3 cup.
              Per serving:
              20g carbs
              3g fiber
              17g sugar??

              Let me know which one you are using because I lurve me some pumpkin! Thanks

                The sticky agrees with Fitday which agrees with the USDA nutrient database.They says 1C pumpkin raw is 116 grams. That is 1" cubes. There is WAY more pumpkin in 1C pureed, so 1/2C pureed is roughly equivalent to 1C raw. It's just another example of why weighing instead of measuring veggies is more accurate.

                  You have the "mix" which has sugar and other ingredients added. You need to get just the plain 100% pumpkin. You can add your own spices and sweetener if you need it.

                          Here is the recipe for a concoction that one of the members here has named "MUP" (Mitzi's Ultimate Pumpkin)

                          First, I want to say that the great thing about MUP, is that it is so versatile. I have heard of people putting coconut in it, and I have tried adding unsweetened cocoa. You can vary the spices, too. Just remember to account for carbs. I used to eat natural almonds in it, but nuts have turned into a trigger food for me. I hope I can add the natural almonds back at some point... we'll just have to see. I've also had it with pecans and walnuts. (I'm avoiding all nuts for the time being)

                          I'll post how I eat my MUP to give everyone a general idea, and you can adapt it to your tastes/needs. Please note: I use a LOT of cream cheese in mine. Lots of people use less, but I like the creamy-ness of it and am not afraid of fat, so I go for it. Staying at or under my cheese limit has not been an issue for me.

                          Here goes:

                          About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

                          In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave on High for 50 seconds then take it out and stir well. I then add a few drops of liquid Splenda, 2 teaspoons of cinnamon, and 1 teaspoon of allspice and stir. I then put it back in the microwave for about 50 seconds, stir, and it is done. I find that the warmer it is, the better it tastes. I've had one person tell me that they like it better cool, though. This makes a lot, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine.

                          Fixed this way: 11 net carbs
                          287 calories
                          23g carbs
                          12g fiber (Woo hoo! I'm a fiber freak )
                          21g fat
                          8g protein

                          Of course, if you add nuts, you will need to adjust the numbers.

                            I just have to say this. There are a lot of people on the board who have lost weight and look amazing.

                            I think it's because our heights are similar... but you are such an inspiration to me. I keep looking at your pics and saying "wow". Thanks for inspiring me!

                              Dream, thank you so much! Believe me, it inspires ME to know that I may have inspired someone. I appreciate you taking the time to tell me.

                              When I first started this journey, I had no idea what to pick as a goal weight. I decided upon 140, because that's the lowest weight I had ever been (for about 2 days back in 1992 ). As I got closer, I lowered it to 135, then 130, down to 125. Never in a million years would I have dreamed that I would ever get close to the 120's. Wow.

                              Having said that, remember NOT to get up on a number! As I reached each weight, I evaluated to see whether I felt "finished" or not. Go by how you look and feel - not a number.
