Yes - it is one of the 'one-cup' veggies!

          Re: Rhubarb

i love rhubarb but i find i have to use a lot of splenda to sweeten it. For me it isn't worth it on this woe because I have to add a weeks worth of splenda to make it palatable.

            Good point Momma Ruthie,

I haven't seen a lot of rhrbarb recipes but you could usually take your own recipe and experiment with the sweetner. Dana of 500 Low Carb Recipe fame talks about mixing sweetners to come up with just the right 'sweet'.

When you get to the nut rung, you could use nuts as the crumble

              Re: Rhubarb

A long while ago a member (Heidi3) posted a berry crisp recipe which looked very much like a crumble recipe.

              The ingredients were
1 1/2 cups of ground nuts of your choice
1 cup oats (or ground flax seeds)
1 cup unsalted butter (chilled and cut into small chunks)
              1/2 tsp salt
              sweetener is to taste

Mix ingredients together with your fingers and crumble over the berries then bake at 350 until golden brown and the fruit bubbles about 35-40 min
I did try it using ground hazelnuts I think and ground flax (linseed) and it worked out very like a crumble.

The crumble recipe would be good for OWL Phase.

I use rhubarb more as a cranberry sauce substitute than a desserty type thing. It's very good with turkey, roast chicken or pork.

Ooops, I had forgotten this is the induction forum

So it would be possible on the nuts/seeds rung of OWL but not for induction because of the ground nuts in it..
