  • question about measuring

Hi guys...can someone tell me how I measure my pumpkin....is it a cup of raw or a cup of cooked as in mashed. I know things like spinach and tomato that cook down a lot are measured raw but wasn't sure about pumpkin.

    Re: question about measuring

I measure itas it comes from the can. Not sure if it is correct or not that way for induction, but it is hard to find raw pumpkin year round. Be sure not to get pumpklin pie mixture though!

Pumpkin out of the can is what I use~~~Libby's brand. Just make sure you are getting plain pumpkin & not pumpkin pie mix which is also in a can. Great choice in a veggie as it has a good amount of fiber!

          Re: question about measuring

To be safe, I would measure it raw rather than cooked as mentioned in DANDR
If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
