  • Finding it hard to get in all your veggies?

    For the first week or so, I was just making salads, eating broccoli with cheese sauce, having tomatoes and raw cauliflower as snacks to get in all my veggies. But Last night I tried a couple recipes from Linda's Low Carb Menus & Recipes - Home and they were fantastic!

    I made the Mockafoni and Cheese and the Chinese "fried rice". Both give you a good serving of veggies, and are delicious. Plus, I really felt like I was cheating and eating genuine fried rice. From now on, I am going to try lots of recipes from her site, and enjoy every bite!

    It makes this WOL so much easier when I spend time cooking on Sunday, and have several meals to use as leftovers during the week. I had some of the left over "fried rice" today for lunch, and it reheated beautifully!

    I know! I have been trying some of them out too and have been happy so far! I am giong to try the pizza crust and make bacon cheeseburger pizza tonite. Made the Mock Danish, wonderful. ANd the no bake jello cheesecake isn't bad either! Have fun with the food, it isn't all just raw veggies like I thought! That would have been boring! Thank goodness for Lindas recipes!!

      I think the most important thing to do if you are feeling overwhelmed with the amount of veggies is to invest in a set of measuring cups. They aren't very expensive and many dollar stores carry them.

      3 cups of veggies daily isn't a huge amount. Most green salads in restaurants are about 4-5 cups easily.

      When you start measuring the veggies you'll see that you aren't eating a mountain of vegetables daily.

      Same goes for things like heavy cream---invest in a set of measuring spoons (also at most dollar stores for $1). You'll be surprized at what 1 tablespoon of heavy cream looks like.

      Why is it important to measure instead of guess? Because all the carb counts are based on foods measured using standard measuring equipment---not on guesses. So if you guess you can be over-estimating or under-estimating your daily carb count.
