I'm thinking about making a pork roast but I would like to throw some potatoes and carrots in the pot for my family, would cooking the roast with them jeopardize my carb intake? I mean, I won't eat them but would some carb residue end up on the roast? Or should I just cook them separately? Gosh, bear with me I am a newbie, sorry for the silly questions!

Well, hopefully somebody will know this. I cooked a roast the other night and because I wasn't sure, I ended up cooking the potatoes, carrots, and onions seperately. My husband couldn't pinpoint it, but he said it tasted differently, both the roast and the vegetables. I didn't notice anything different about the meat, but I think my tastebuds might be a little off.
Since we used the crockpot for the roast, really the only other difference was the extra roasting pan for the vegetables.

I'ma trying to find it, no success thus far, but there are posts or threads I remember reading that the carbs would get absorbed into the meat. I make sure me wife or I, whoever does the cooking that particular day, cook potatoes and carrots seperate. BTW, That's what is for dinner tonight. Look for it it's here somewhere. God Bless, Joe

I think cooking them that way is fine. I can't imagine vaporized carbs being of any use....and if so, we better stop inhaling from our noses when something smells good! Unfortunately, carbs are water soluble...think of what happens to the water when you boil potatoes or pasta. All that lovely carby starch that transfers to the water is pure carbs.
This means anything cooking in that liquid will absorb some of those carbs as well. However, the exact amount depends on the roast, the amount of potatoes used and the amount of liquid used so it's hard to tell how much transfer there is. I'm assuming the roast wasn't completely submerged so transfer would be minimal.
As long as you're not chugging the liquid that the veggies and roast were cooking in, you should be fine cooking that way in the future.
