Good "Snack" ideas...

  • Good "Snack" ideas...

    Ok... so we're doing a River Trip on saturday (Float down the river for about 7 hours). Aside from packing some baggies of veggies, what are some other things (INDUCTION FRIENDLY) that I could bring? We'll have a cooler, so things kept cold will work, but I won't be able to heat anything, and it'll need to keep for at least several hours.

    No Beer for me this trip! It's going to be.... interesting... watching 20 other people get sloshed, and being the one laughing and taking pics!

    Thanks in advance guys! I'll be scouring the recipe sites until saturday!

          olives, hard boiled eggs, pork rinds (you can bring a bag and feel kinda normal with that one lol)

              Awesome suggestions!

              I was thinking maybe I'll make up some chicken nuggets breaded in pork rinds & parm cheese ... but I have to wonder how they'll hold up. I know the coating will get kind of soggy from being in a container in the cooler, but if the flavors there I might not care!!

              I'm going to try to make some oopsie rolls tomorrow and see how they do w/ a few slices of deli meat & cheese.

                I make the chicken strips that way w/ pork rind & parm cheese. I add a little poultry seasoning aswell. They hold up nicely although they lose their crispiness when they cool but the breading stays on and not to soggy. When reheated in the oven they get crispy again too.(for future reference)

                P.S. Ham roll ups with cream cheese, sardines, Jalepeno poppers are good cold too. Stuffed cream cheese celery. Salsa to go with pork rinds or cheese chips. Cabbage or brocolli slaw. Mock potato salad made with cauliflower, turnups or boiled radishes. Cucumber, onion, bell pepper sour cream salad. Any left over bar-b-qued meat.

                  Ok, so here is a dumb question, but to make these nuggets I just crush the pork rinds, flavor the dust and roll my chicken in it?
                  I want to try it, I miss my chicken in a coating.

                        I have never mde that because I DESPISE pork rinds, but I would assume that's how you do it! =)

                          Hi Sue,
                          I buy the boneless skinless breast and cut them into strips. I crush a bag of pork rinds, add 1 cup of parmesian ch. a half to 1 tsp. poultry seasoning. Then beat up an egg and egg bath the chicken and then roll them in the pork rind mixture pressing down on them to coat well. Then deep fry them.

                            - Yep, just use egg for the "batter" then roll them in crushed pork rinds. Don't laugh but I used about 1Tbsp of Flax meal too to "umph" the texture a little since I *Prior to my new life on AD* used crushed stove top stuffing for breading anything. (Ever notice just how nutritionally insufficient that stuff is!?! Geez louise!)

                              Oh, Andrea, I forgot to mention ... some people have said that you can use just grated parmesean (even the Kraft "pizza" type stuff) and it'll make a nice crunchy coating!
