  • Induction friendly meatloaf.....

    Everyone has a meatloaf recipe, I think. I adapted our family favorite to be induction friendly. Here it is:

    1 4 oz. can mushroom stems and pieces
    2 eggs
    1/2 tsp. dry mustard
    1 lb. ground beef
    1/2 lb. bulk sausage

    Chop mushrooms until they are the size of pencil erasers. Add eggs and dry mustard. Mix. With your hands, mix in ground beef and sausage until the whole thing is mixed so well you can't tell what is sausage and what is hamburger. I put mine on a tray that fits over my 9x13 cake pan where the grease can drip. Bake at 350 for 90 minutes.

    Sounds great, Susan. And I imagine it can easily be adapted for different kinds of meat too.
    Wondering how to get 'most' of your net carbs from your induction veggies?
