You Won't Believe it's Cauliflower Pizza Crust

    1 cup cooked, riced cauliflower*
    1 egg
    1 cup mozzarella cheese
    1/2tsp fennel
    1 tsp oregano
    2 tsp parsley

    pizza or alfredo sauce
toppings (make sure meats are cooked)
    mozzarella cheese

Preheat oven to 450 degrees farenheit.

Spray a cookie sheet with non-stick spray.

In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.

Place under a broiler (grill for the Europeans) at high heat just until cheese is melted **.

    Notes:

*I use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, I shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.)

ok, I know this maybe should go in the Food section, but I wanted to show the new people that you don't have to give up your favorite foods on this WOL! You can have all the favorites you have always loved, just in a new and healthy low-carb way! This pizza is so easy, and Induction legal! I made this with peperoni, pizza sauce, and 1/2 cup cheese on top. Its only 190 cal, 4.25 carb, 1.25 fiber, 15.5 protein, 12.25 fat if you eat a quarter of the pizza. Save the leftovers for lunch at work, or a quick dinner the next day! You don't have to give up a thing on this WOL, except your fat pants!!
Try to get 80-100 ounces a day!

Whether you think you can, or you think you can't, you're right.

Thank you, guys!! It is great! It was even good as cold leftovers for lunch at school! The only problem is not eating the whole thing!

I will have to try this one. I made the Cauliflower lasagna. I added a little bit of burger. I don't know if I didn't do it right because although it was good, it tasted like cauliflower loaded with stuff.
Re re starting this time for good with the support of my husband. He is doing this with me.

Another pizza recipe that doesnt use up your 'other veg' allowance is the 'Biker Goddess Pizza'
Originally posted by Miss Phode View Post

              The recipe:

              4 oz softened cream cheese
              4 eggs
              1/3 cup heavy cream
              1/4 cup parmesan cheese (grated)
              1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese (I use mozzarella /cheddar mix)
1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
              1 cup mozzarella cheese
Toppings to taste (I use pepperoni, sausage, green olives, whatever!)

Beat together cream cheese and eggs till smooth.
Add cream, parmesan cheese and spices
Spray 13x9 glass baking dish with oil
Put 2 cups of shredded cheese in dish and pour egg mixt. over Bake at 375 for 30 minutes
Spread with sauce and then add your toppings
              Cover with mozzarella cheese
              Bake till browning and bubbly
Let stand for 5 minutes or so.

Now I made just a few changes. First off, I skipped the sauce and put fresh thinly sliced tomato on top to save carbs. I also cut the amount of cheese for the topping in half. Our toppings were pepperoni, tomato, onion (very thinly sliced, probably only 3 tablespoons worth) and 1/4 cup of spicy breakfast sausage.

It was amazing. Now, the edges were cripsy crunch, the pieces in the middle were a little droopy, but the flavor was still amazing. I think maybe I let it sit in the pan too long. Possibly, if I had taken it out and put it on a wire rack to cool, it wouldn't have gotten soggy? I'll have to try that next time.

I almost forgot to mention, hubby and I ate this with garlic butter. We drizzled a little on top after it came out of the oven. I thought I'd died and gone to heaven. If you like Sicilian style pizza, you'll really like this.
It would use a lot of cheese especially the original recipe so the serving size I use if I make the recipe is 1/6th of the whole pizza
Wondering how to get 'most' of your net carbs from your induction veggies?

Re: Pizza!! (how you can still eat great food on Atkins Induction)

Call me lazy, but I just ate my pizza in a cup. Before Atkins, I was a Pizza Hut Meat Lover's girl, the more toppings the better. Today, while I was making my kids their individual pizzas, I threw some toppings in a large oven proof soup mug. Bacon, sausage crumbles, pepperoni, green pepper and onion. Mixed it with some tomato sauce and mozzarella cheese. Then I threw a little extra cheese on top and put it in the oven next to the kid's pizza. When their pizza was done, my casserole looking stuff was warmed through.

It was the best part of the pizza with none of the guilt.

HMMM Both the Biker Goddess and Cauliflower pizza sound fabulous! My husband has been wanting pizza and I keep saying no because I know it's my downfall and I won't be able to resist! I LOVE SICILLIAN PIZZA!!!! I am making this next week for one of our dinners (hubby isn't doing this with me so often I make something and adjust it for me like we had shrimp fettuchine alfredo but i had mine over spaghetti squash w/ garlic butter vs sauce)
