  • Induction Day 3

    Well it's day three and I went back to work after being off for the summer.
    I was so busy that I didn't have time to spend thinking about food.
    I packed myself a great salad with olives, hot peppers, avocado, emmental cheese and a little sprinkiling of parmesan. It was quite tasty and satisfying. I'm very happy that I can eat olives and hot peppers! Sure adds a little kick to things.
    Had celery and cream cheese for snack with some red pepper strips - yummy!
    For dinner I had roast chicken from Costco, a small salad and I made the
    faux sweet potato recipe from the recipe board. It was quite tasty - quick and easy too. Love that cream and butter!
    I could see how you could sweeten that and it would be like a pudding.
    Might try it with Stevia sometime.
    Today was easier, and although the girl across from me at lunch was eating a huge piece of carrot cake with cream cheese icing, it didn't bother me much.
    The ice-cream cones people were eating coming out of Costco looked good too, but again, it didn't bother me much. I know as I keep going with induction, I will crave those things less and less.
    So far so good and I'm grateful to have this message board for support!

      Congratulations on making it through Day 3, today is my third day as well. Where did you find the faux sweet potato recipe, I've been trying to find it but I can't.

        Can't remember where I found the recipe.
        Basically you just buy a can of pumpkin - no pumpkin pie filling
        Heat it up and add cream and butter to it and season as desired.
        Quite nice! You can do the same idea with cauliflower - Boil or steam it and then puree it, return to pot and heat a little to eliminate some of the moisture. Add your butter, cream and other things like seasonings, onion, garlic etc.
