  • what does he mean by "peppers"?

    Can someone enlighten me? In the DANDR under acceptable foods for induction, peppers are listed, 2-3 cups per day. Does this mean spicy peppers or bell peppers? I love, love, love, orange, red and yellow bell peppers....

    Also, is this an Induction recipe in the book? p. 454 Eggplant Parmesan calling for 1-1/2 c. controlled carb tomato sauce. He allows us 1/2 c. per day tomato under circumstances (p. 126) but I always thought processed tomatoes were high glycemic? Is controlled carb tomato sauce a canned variety that has no sugar in it?

    I am having so much fun looking at recipes and trying new things. Today I'm going to try the cauliflower "hash browns" I got on the Linda's low carb site.

    Yes, eat your gold and red and green peppers! That is what it means.

    Yes, controlled carb tomato sauces are made with no added sugar. Haven't tried them... I am on a cherry tomato kick. Love the little things cut in half!

      I was hoping you were going to say that! Sauteed peppers with any kind of meat is my idea of a great dinner, or with eggs for bfast. I can't wait to try the Eggplant Parmesan. Hmmm, cherry tomatoes, now that sounds like a great snack with cream cheese...Thanks!

        OMGoodness.. I would love to hear how your eggplant parmesan turns out!! I have been DYING to find some new veggies I can handle.

        I love my asparagus, broccoli, and zucchini as much as the next, but day in and day out gets a bit old. But that Cauliflower Pizza sure is something else!!!

          you can make your own tomato sauce by chopping some tomatoes and cooking them with a little onion and alittle water until the tomatoes have disintegrated.

            Thanks for the tips, gals, I will certainly let you know about the Eggplant Parmesan. I have almost all the ingredients, now I just need to get the eggplant.

            Also I want to try the spinach-mushroom casserole, I think I found it at Linda's low carb site.

            I like to combine a couple vegetables and saute them with olive oil and garlic. Onion and anything goes great, like yellow squash, any kind of bell pepper, spinach, and if I feel fancy I put mushroom, and grate cheese on it at the end. Or if I don't put cheese I put salt. Garlic is the key to all this, for me. It takes a little practice to learn which veg goes in the skillet first, usually I put the thing that takes the longest, like pepper, then the onion, then the garlic...you probably know all this.

            I know, I know, onion is not listed as an Induction veg. It's a staple of my cooking, and it doesn't seem to spike any cravings....

              You can find good tomato sauces right in the grocery store. I read the ingredients and look to see if there is added sugar. Lots do add sugar but there are some that dont if you look

                Onion IS listed!! On the 1-cup veg list along with tomatoes, cauli, broccolli, green beans etc.

                  Thanks for the tip, LucyLooHoo, I will put that on my grocery list. And Lizellen, you have saved me from guilt tripping about the onions, and now I can have those fresh green beans I've been slobbering over at the produce stand! How did I miss that list?! There is SO MUCH good stuff in the DANDR, what a beautiful gift Dr. Atkins gave us...
