We had a Greek Festival here last week so I picked up some authentic feta cheese and used some in tonight's dinner -- DELISH! Thought I'd share:
I took 1 boneless skinless chicken breast and sliced a pocket in it into which I stuffed 1/8th cup feta and then spooned in 1 Tbsp Newman's Own Naturals Beta Feta Vinaigrette. I pinned the pocket closed with a toothpick and then spooned 1 Tbsp of the same dressing over top the chicken breast. I put in in a glass baking dish covered with foil and baked it at 350 for 35 minutes. All of the great flavors infused the whole breast. According to my recipe analyzer the whole thing has only 1.77 carbs, 1 of which comes from the 2Tbsp of dressing. Had it with steamed broccoli and was one happy camper.
FYI the label on the dressing does say it contains citric acid if that happens to be a deal breaker for anyone.

If you stick it in the freezer for a bit it makes it easier to manage.... oh the places this recipe comment could go. LOL!!
and tool about 100 miles over to Tarpon Springs, FL, home of some seriously great Greek eats ... if it has feta and garlic and olive oil in it, I am so there!
