Someone suggested eating ricotta cheese mixed with a little splenda for dessert. Is ricotta allowed? THe carb count is low - 1 carb for 1/4 cup.

Re: Ricotta during induction?
Indeed, ricotta is not allowed. It is a 'fresh' cheese. However, you can use cream cheese instead. Just be careful with the amount of sodium... cream cheese is usually pretty salty.

Re: Ricotta during induction?
fresh cheeses aren't aged. Aging removes more of the liquid or whey. The whey contains the lactose.Originally posted by brightstar7801 View PostYou know I was wondering what "fresh cheese" was. Dumb question, but why is is called a fresh cheese?
I'll be able to have that in two weeks! Yes, I can't wait to make this ricotta cheesecake with it!~Megs~
