I really hate eating breakfast -- always have BUT... my 2 standbys aside from leftovers are:
Bacon with tomato slices or a 2 egg omlette with swiss & red peppers

(but definitely, the Bacon with a little tomato mixed into a 2 egg omlette with swiss & red peppers would be preferred... maybe with a little mushroom, too!

I find 'egg muffins' great, you can make them the night before too.
for 4 muffins you need:
3 eggs, pinch of grated cheese, couple of mushrooms, ham
method:
mix the eggs and place in the muffin tray (I've got one of those rubber trays - great for these), put in the diced mushrooms, ham (or bacon) poke with your fork to make sure they're covered in egg and sprinkle a small bit of cheese on top (I like to mix in the cheese).
Then in the oven (about gas mark 7) for about 25 mins....
put on a cooling rack once they're done and you've got breakfast for the next day!

I often make a crustless quiche at the weekends which makes 6 slices for quick breakfasts the following week.Wondering how to get 'most' of your net carbs from your induction veggies?

I like the cinnamon muffin in a minute in the microwave. I slice it into three english muffin type thingys and there's breakfast for 3 mornings. A little cream cheese and YUMMY!~~~Donna~~~

I'm with Elizellen. I make a couple of quiches and then freeze in individual servings. Bring out the one I want the night before and it is all good to go in the morning. Some even taste good cold. Check out the link in my sig line and there you will find some breakfast ideas. Try the OOpsie rolls or the revolution rolls and make a 'bunwich' with your favorite filling.Elsie150
