I had some extra ground beef in my fridge, so I decided to experiment. This will only work if you like onions and mushrooms. I took 2lbs of ground meat, 1 egg, and seasoned everything with pepper, garlic, all spice, and a little basil. Then I chopped up 1/2 of a large onion and added 1 medium can of mushrooms. Mix everything together really well, making sure all the onions and mushrooms are packed together tight. Form into a loaf and cook for about 1 hour and 15 minutes on 375 degrees. It comes out extremely good. I cut it into 5 large slices, and will eat it ontop of my cucumber and mixed lettuce salad for lunch everyday this week!!!

Re: My meatloaf
Sounds good. Be sure that you are counting the carbs in those mushrooms, egg, onion and garlic into the total carb count for the recipe.Originally posted by newformenotyou2008 View PostI had some extra ground beef in my fridge, so I decided to experiment.
