  • Mysterious sugar grams appearing in vegetables?!

I love green beans, and so I was going to eat 2 cups of them a day for a while to meet the induction requirements.

However, I am a poor student, so I have to buy the cheap canned versions. I made sure that there was no sugar added, the can says:

    INGREDIENTS: Green beans, salt, water.

However, on the nutritional facts it says 2 grams of sugar per 1/2 a cup? Thats 8 grams of sugar eating a vegetable! Where did that come from?

Any opinions on whether or not its safe to eat these for induction?

There is some natural sugar in all vegetables. That is what shows up on the label. Safe to eat!!

Thanks! I was a bit worried about it because 2 grams/half cup looked kind of high to be "natural sugars", but I really had no reference point.

I dont think green beans are allowed during induction.

Green beans are allowed. You're only allowed 1 cup per day though.

As long as there is no sugar or any other of its aliases on the list of ingredients you should be fine! Probably those 2 grams per 1/2 cup is the reason they are listed on the one-cup list. Well done for looking before eating

Remember that Dr Atkins told us to eat most of our carbs from our veggies, so 4 net grams for one third of your veggies is not a bad 'bargain' and well on your way to getting at least 11 net carbs from veg.
Wondering how to get 'most' of your net carbs from your induction veggies?

I see string and wax beans listed but no green beans. Just like green peas( they only allow snow peas) green beans are legumes and not allowed until the legume rung i would assume.

Green beans are a sub category to the string beans listed - so they are allowed.

Re: Mysterious sugar grams appearing in vegetables?!

Green beans = String beans. I think a lot of the naming depends on if they are broken or not. Also seen 'em called snap beans...why, I'm not sure.

Anyhow, yes, eat them, but only one cup a day. You're going to have to get varied on your veggie intake...though I make a huge pot at a time of green beans and use them for about two-three days. That's the best way to go.

They are called snap beans because when you have just picked them fresh from the garden some people clean the dirt and leaves off them then break them into about 2-3 pieces. When you break them they snap. The ones from the grocery store don't usually snap because they are several days old and they get soft.
