I personally eat S/F jello and it does not affect me. However, everyone is different so always monitor yourself closely when introducing questionable foods with ingredients that have been known to stall others.

it seems to me that V8 has beet juice in it, and beets aren't legal, I don't think.

I assume we're talking about induction?? Beet greens are legal, beets are not. So the V8 is not legal. Also, aspartame is not legal, which is what is used in sugar-free jello. You can make a jello-ish treat with sugar-free syrups (sweetened with splenda) and unflavored gelatin, I believe. In addition, to get all the yummies from veggies (aka the fiber), you need to be eating the actual veggie, not as a juice. THat's in the book as well.

If the Jello is made with aspartame, then it's not legal for Atkins. Dr. ATkins wrote that aspartame stalls or slows weight loss for some people. So even if you are losing weight while using aspartame, you might not be losing it at your potential.

V8 juice not acceptable for Induction. Juices may be introduced during On-Going WEight Loss Phase.

Juices typically do not contain fiber: If you read the nutritional label for the V8 juice it says for 8 fluid ounces, it has 10 total carbs and 1.9 grams fiber. A cup of chopped tomatoes has about 7 total carbs and 2.2 grams fiber. Clearly eating a cup of chopped tomatoes gives you the most fiber for carbs.

So don't drink your vegetables. Eat the whole vegetable to get the most out of them nutritionally.

Sorry I meant the S/F jello stalls some people. It has aspartame which is known to be bad for you. It could also trigger sugar cravings.

I don't drink V-8, even though I love it. Too many carbs for me to waste on a half glass of juice. Besides, lately it takes me all day to get my water in and I refuse to have anything to drink until the water is all gone.

Wal-mart carries a brand called handi-snack with is made with sucralose (splenda)

Here is a recipe for making any flavor jello you want and make it with splenda instead of having the aspertame...............

                    2 Kool Aid Packets
1 tsp. liquid Splenda or stevia concentrate (recipe) or granular Splenda
                    4 packets of gelatin
                    4 C water

Place all ingredients except water in a mixing bowl. Add 3 cups of boiling water and stir until completely dissolved. Add I cup cold water. Stir - Chill until set.
