  • Picky eater-Cauliflower

    I have done atkins before and have been quite happy eating the basics-some meat on a salad and cheese. I am trying to do some of the recipes to make sure I don't fall of track because I have suddenly gotten bored. I know there are a few (actually there seem to be several) recipes that involve cauliflower-mockafoni and cheese, the cauliflower pizza to name a couple I would like to try. I am pretty picky about my veggies and have never liked cauliflower so these recipes of course scare me a bit. I am wondering how much like cauliflower these recipes taste once they are preparred?

    First of all good work on trying out new stuff. You are right it will be secret for continued success.
    I like cauliflower so I am not the right person to answer. I think the pizza "dough" is very good (just remember to squeeze water out of the cauliflower. I like to make it on parchment paper and turn it around once. )
    My two favorite cauliflower dishes is cauliflower potatoes

    And fried cauliflower "rice". I nuke the cauliflower then grate it then fry it up with stuff. It is absolutely great My family's favourite Atkins dish. I like it with garlic, ginger, onions, peppers, cut up snow peas and perhaps a bit of curry and cayenne. Sometimes I add some shrimp or pork.

      Good for you that you are trying out new veggies. I used to be a vegetarian and I learned that plenty of people don't like certain veggies because they never had them properly prepared.

      What I suggest is that you take advantage of the salad bar at your supermarket. Most of them have raw cauliflower. So just buy 1/2 or 1 cup of it and make up a smaller version of the recipe. That way if you don't like it, you didn't spend alot of money on it.

        I never cared for cauliflower until I learned to "doctor it up" really well. Here are some of my favorite recipes using cauli that taste wonderful!

          Ok, I am probably considered weird, but I like cauliflower raw, cooked gives it a taste that is just to me..............

          I think I am going to ry some of those other recipes though, because I like variety...............

            I just made the mexican "rice" from Linda's site (and the house smells awesome!). It's wonderful and you wouldn't know you were eating cauliflower. I like it served with grilled chicken.





            MEXICAN "RICE"
            10 ounces fresh cauliflower, grated, 1/2 medium
            1 small onion, slivered, 2 1/2 ounces
            2-3 tablespoons butter or oil or a combination
            1/2 cup salsa
            1/8 teaspoon garlic powder
            3/4 teaspoon salt, or to taste
            1/4 teaspoon pepper
            1/8 teaspoon granular Splenda
            In a very large skillet with a lid, sauté the onion in butter and/or oil until tender. Stir in the grated cauliflower, then the remaining ingredients. Mix well. Cover and simmer 10-12 minutes until the cauliflower is tender, but not mushy, stirring occasionally.
            Makes 6 servings
            Can be frozen
            Per Serving: 56 Calories; 4g Fat; 1g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

              I have found that if you use the frozen cauliflower instead of the fresh, that the cauliflower taste isn't so pronounced. Try it, you'll like it. Also, have to checked out Linda's recipe site. Its a great one and her 4 star recipes are 4 star. Try her creamy chicken soup, It has cauliflower and to die for

                I think the taste/smell is from the way it's cooked. If cauli is boiled or steamed it can get a rather harsh odor. That odor can be masked if you add a bay leaf to the cooking liquid.

                But I don't find that to be the case if it is roasted---toss the raw cauli florets with olive oil, sprinkle with salt and pepper, roast in a 376 degree F oven for about 45 minutes, stirring occasionally until the cauliflower is nicely browned.

                  So I made and tried the Mockafoni & Cheese today...It wasn't that bad. I only had extra sharp cheddar so the taste was a little too strong with the amount of cheese. Next time (yes I liked it enough to make it another time) I will use regular cheddar!

                    I, as well, am not a cauliflower fan, but I am definietly intrigued enough to try these. Without eating potatoes, rice or pasta my plate always feels empty like something is missing from the meal. I believe this will be the "mind over matter" solution I need to help make this life-style change a little bit easier. I just hope they taste edible enough for me to use regularly.
                    Who said life was easy? Whoever it was should walk a day in my shoes.
