I snack on string cheese, salami and pork rinds. Sometimes I will dip the pork rinds in a no carb dip I make out of sour cream...makes me think I'm eating chips and dip.

I sometimes make small crustless quiches (containing egg, cheese, cream, veg, meat) in muffin cups so I have small snacks to be able to have a few bites on-plan.

          Elizen,

When you make the quiche muffins do you spray the muffin cups? I tried them a year or so ago and they stuck terrible.

          Thanks,

I am not sure about spraying them but you can get the silicone muffin pans they work wonders.

I make them in glass pie pans. And just cut them in sections. More non sticky that way.

I now always use the little silicone muffin cups as I got fed up with cleaning out my muffin tins I stand them in the muffin tray, one in each hole so they dont go all wobbly on me. Also I leave them in the silicone cups till they cool down and they just fall out.
