Atkins Induction friendly soup recipe?

  • Atkins Induction friendly soup recipe?

    With the cold weather and arctic blasts we have been experiencing, I have had a craving for some hot soup.

    Does anyone have any recipes they could share for soup that can be eaten during Induction?

    I am looking for something I can slow cook in a crock pot.

    I just make mine out of any cooked meat and veg - just put it in the food processor and wizz it into a puree then add some chicken stock, cream and/or butter.

      I like to make big, hearty soups with all my vegetables. I dont have the time to make my own stock, but I guess you could. I also dont cook it in a slow cooker, but on the stove top in about an hour.

      I like to take 2 cups of chicken broth, 2 cups of beef broth, and a few tablespoons of tomato paste. I get it all heated and mixed through, add some marjoram, basil, dill, and parsley. I add tons of vegetables. I like to add about 4 celery stalks, an onion, a few garlic cloves, some cabbage, grated cauliflower (I find this a must in soups, makes it seem starchy to me), 3 or 4 zucchinis, broccoli, some chopped tomato, basically any vegetables I have in the drawer. Bring it to a boil and simmer about 45 minutes or so. Works everytime.

          It should be induction-friendly as all the ingredients are on the allowed list of foods for induction - but you would need to work out how much of each veg you would be eating at one time in order to calculate how much veg of your 3 cups per day you had in the soup.

            Good question...soup is good foor, especially in the winter months...it helps to take the edge off of hunger.

              Good question...soup is good foor, especially in the winter months...it helps to take the edge off of hunger.
              lol...It is always cold here anymore...usually up until May. Then when September hits we go from 110 degree days in the shade to 20 degrees in the sun. Believe me, KC is not warm like it used to be. There's something blowing in the wind. My husband is from the UP of Michigan and even he can't stand it.

              This past couple of weeks it's been so cold. Waking up to -5 temps with a -25 windchill makes me want to hibernate.

              I want soup!!! More so, I want some Pasties, but I can't have the carbs!

                Pasties are to Michigan like barbecue is to KC.

                  I eat this allot. It freezes well too.

                  PUMPKIN AND SAUSAGE SOUP
                  1 pound pork sausage
                  1/2 cup onion, chopped, 2 3/4 ounces
                  1/4 pound fresh mushrooms, chopped, about 5 medium
                  1 clove garlic, minced
                  15 ounce can pumpkin
                  4 cups chicken broth
                  1/2 cup heavy cream
                  1/2 cup water
                  Salt and pepper, to taste
                  In a large pot, brown the sausage along with the onion, mushrooms and garlic; drain fat. Add the pumpkin and broth. Phoebe added a tablespoon of Italian seasoning at this point, but I've left that out. Season with salt and pepper, to taste. Cover and simmer 20-30 minutes. Add the cream and water; simmer 10-15 minutes longer. Adjust seasoning.
                  Makes 8 cups or 8 servings Per Serving: 277 Calories; 21g Fat; 15g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

                    You can walk into a gas station here in Kansas City and get the best freakin' BBQ you ever had.

                    Same for Pasties in Michigan. The gas station pasties are the best w/ketchup and orange crush soda.

                      Oh thank you...This sounds fantastic. I love pumpkin, but I was not aware it was allowed on Induction. I have everything to make this right now at home except the heavy cream, and I have a huge box of Italian sausage I can use.

                        I'd get expert opinion before you use this idea for a recipe, as I just tried it out. But it really was nice and hit the spot! I used chicken broth as a base, and added just about 1/4 cup of heavy cream. Then I added some cheddar cheese and broccoli. The only other thing I added was Mrs. Dash original seasoning. My mom makes this soup low fat. But I subbed the lowfat milk with the heavy cream. You just mess around with everything until it's the way you like it. I like just the broth with the seasoning though. It's not a pretty nor a thick soup. But it tastes wonderful IMO. Again, I read over everything over and over, and it seemed all of it is induction friendly. Hopefully if I'm wrong someone will correct me!
