    Rhubarb

    Spring is on its way and rhubarb will be close behind. Where does rhubarb fit into Atkins? :confused

    Rhubarb is on the one cup veggie list!

    You need to measure it raw though.

    It cooks down quite a bit, so you don't really get a whole lot for your 1 cup once it's been reduced. I really liked it with cream cheese on a piece of flax bread...it was a nice bright flavour. :yes

      I love rhubarb! I simmer it down until it's like a jam. Add sweetener. Let it cool and mix it in with whipped cream or eat it as a sauce for pork chops or turkey.
