  • Chicken consome

    Hello All

Do any off you cook consome at all? I cook chicken, root veg with stock starch and sugar free. Slow cook it, drain off all the liquid and let cool to remove the fat layer off the top. Store it until required - is this OK? I dont eat any of the root veg, just the clear liquid.

    Many thanks

I make my chicken stock the same way as you do but include the induction-legal root veggies like turnips or celeriac (celery root). You could also use jicama but we don't get that in UK so I have never tried it.

Often I use celery and onions too.

also I save the fat for cooking with.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Many thanks, this is reassuring. I did not think it would be a problem but
can't read any label when it's a DIY consome!

I personally would not use any other veggis that what are on the legal list... alot of root veggies are high in natural sugars/carbs and just because they remain whole.... I do think when you cook them some of thse sugars leach out into the broth...

I use a small onion, lots of celery and mushrooms cauliflower and broccoli... it make am amazing broth!
