  • Sheer Joy of an Induction Meal!

    I just had a chicken leg quarter, rubbed with spices, and roasted until the skin was a crispy delight....

    Salad consisting of 1 cup bok choy, 2 T scallions, and 1/4 cup cucumber, topped with sesame oil.... tasted very oriental!

    1/2 c. steamed cauliflower topped with a bit of melted, grated cheese....

    and unsweetened iced tea.

    I feel positively decadent tonight... satisfied, no satiated....

    and my carb count today is 18.5!

    I know what you mean. Sometimes I feel so satiated I feel like I've cheated when I haven't! This is a wonderful way to eat. That sounds like a yummy salad.

      Sounds great Sunny! I am not kitchen inclined so could you share with me exactly how you made the chicken and what spices you used, etc.? I would really appreciate it! Thanks so much!!

        Kathleen, I do love playing with herbs and spices, but tonight all I used was Old Bay Seafood Seasoning! It was wonderful on the chicken.

        It helps if you rub the chicken with oil before adding the spices.

            I used canola, but olive oil would be even better.
