  • Spinach

I see in the FAQ that Spinach is a 1 cup a day veggie. How long has this been in effect? I always thought it was a 2-3 cup veggie like lettuce. Isn't spinach much closer to lettuce in carbs and glycemic index than it is to broccoli and string beans?

I'm glad I only ate 1/2 of my spinach salad at lunch.

Also, peppers are listed as 2 cups a day. Don't peppers have quite a bit of sugar, like tomatoes and onions?

    Re: Spinach

In DANDR Dr Atkins did include spinach in the one-cup list and peppers in the 2-3 cup list

Some people consider this was an error, but even on the latest Atkins company website it does still appear on the second list.

I am glad peppers are on the first list, as they are a good way to be able to get 'most' of our net carbs from our veggies, as eating one cup of them = about 6 net carbs.

But it is only for 2 weeks, and after that you could move to OWL and add 5 net carbs of spinach to your other veggies, so not too much of a hardship I hope
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
