    I am really sick of the eggs bacon/sausage ..do you guys have any ideas? :help

    Welcome aboard!

    You can check out the recipe Forum for lot's of good ideas. There's no rule that says your stuck with bacon and eggs for breakfast, why not try a small steak in the morning with or without eggs and some sauteed baby spinach.

    Have a few cheese rollups, pick Swiss or cheddar, a little Mayo, a few veggies roll em up and your good to go.

    Chicken, egg, turkey, tuna salad are all great ways to start the day - just watch the sugar and carb count on the mayo you use. Try a roasted chicken leg in the morning or some thin slices roast beef drizzled with olive oil, some basil and salt and pepper...add some cheese to it if you like.

    You're really limited only by your imagination..have a hankering for hot wings with blue cheese dip at 7 AM...go ahead...eating is what Atkins is all about. So think outside the box and have some fun!

      I like to bake up a big batch of little meatballs, and I like those for breakfast with a piece of cheese or a boiled egg. Or if I get really crazy I'll saute a few up with some mushrooms and then scramble an egg in there as well, or skip the egg and maybe just melt some cheese over them. I like non-traditional breakfast foods. :yes

      Whatever floats your boat, but try and combine a fat/protein/veggie.

        Yep, leftover supper is my favorite breakfast food! You might also want to try a moch danish (recipe at top of the forum). I always add some flax meal to mine to make it taste more like bread.

          here is a recipe for induction friendly pancakes. If you top it with butter and sugar free maple syrup (check the label!) it tastes just like pancakes:



          I've even found Atkins brand maple syrup at my store - very tasty, but a little thin

            I make all of these. The meatballs and breakfast muffins freeze well. The Edam/Gouda ones do not:

            Gouda Cheese Muffins (I love these)

            Breakfast Meatballs
            I freeze these, you can reheat in the microwave. After they bake I put them on a cookie sheet (placed on wax paper) and freeze for a little bit before putting them in a freezer bag. Freezing them this way keeps them from sticking together once they're in the bag. I freeze green peppers, diced onion & other veggies this way too. Easy to measure out because nothing sticks together!

            Breakfast Muffin

            I make these for my husband to take to work for breakfast. This is not my recipe, and I apologize because I have no clue where I got it anymore to give proper credit:

            spray a 12 hole muffin pan with pam. In the cups place crumbled cooked sausage, ham, bacon or whatever meat you'd like. Add grated cheese such as cheddar, Swiss, Monterey jack etc. Don;t overfill with the meat & cheese. Fill about 1/2 or 3/4 at the most. Beat 8 eggs with a splash of cream and spoon mixture in to cups. Bake 350 degrees for about 15 min. They'll start to brown on the edges.

            You can use any kind of meat, cheeses, veggies etc. Sometimes I chop fresh spinach and add to egg mixture before spooning in to the tins. I use pork sausage a lot, I think about 1 oz. goes in each cup, along with an ounce of cheese (for a rough idea of quantity)

            Note: I have no idea on exact carb counts, because I always switch around the things I put in and I add from there. I've never had them be over 1-2 carbs each though. I have kept these in the freezer so Hubby can grab a couple to take to work. He nukes them for about 1 minute, 30 secs there. I just individually wrap them in saran wrap when they're cool (I put in fridge to cool down) and place in a gallon freezer bag.

              I've made eggs an event! I love to add spinach green chiles, cherry tomato and green onion for tex-mex flair, and then top it all off with an ounce of pepperjack and 2 Tbsp salsa!

                  Jennifer, check out the You Wont Believe its Not French Toast in the cookbook.
                  You will turn your nose up when you see that its made from pork rinds but honestly, its so good with a tad bit of sugar free maple syrup
