Been quite active on these forums lately but I know you guys are here to help me end the never ending journey of eating fattening snacks and junk food - 4 GOOD! Lol
I'm posting a few pics of the local dishes we eat here and would like some advise on which ones I can eat safely. Been in induction for close to nine days eating salads and olives...would like to know if I can eat the locals...
OK...here we go...
Fufu and light soup

Fufu is prepared using cassava or yams or cocoyams with plantain...mixed with water and molded into a round ball. The soup is basically tomatoes, tomato puree, onions, peppers and sea fish/meat of any type.
Fried rice with fried fish

This is basically fried rice which I know I can't have!
The fish is fried (in oil) served with green peppers and a vegetable salad (sometimes the canned ones)
Banku and Tilapia (fish)

The banku (the round white ball) is made out of maize or corn dough and mixed many times to get it into shape. The tilapia is a fish.
Spices and ingredients used in nearly all Ghanaian foods. lol

Red red

This food is prepared by frying plantain and serving it with beans in stew.
Kontomire Stew

This is served with yams. It is a combination of cocoyam leaves mixed with shrimps, tomatoes, onions and spices and lil bits of meat or salmon or fried fish and boiled/cooked with red oil...lol...sorry, im not a big cook myself!!!
