Re: Atkins Pizza
AS far as I know there is no ready-made Atkins pizza you can buy.
There are several pizza-like recipes you can make that would be legal for the various phases of Atkins depending on the ingredients.
Also you will have to account for the extra vegetable, cream or cheese ingredients in the portion you eat so you don't overdo your 'allowances' of those.
Our cooking forums have many versions of pizza recipes and here are a few from the 'Main dishes' cooking forum this year:
Also here is a post about the 'Biker Goddess Pizza' which was the first one I found when I started but I can't find the original thread it was posted in
Originally posted by Miss PhodeI made the Biker Goddess Pizza on Friday. I wish I had a camera, because it was really pretty as a picture.
The recipe:
4 oz softened cream cheese
4 eggs
1/3 cup heavy cream
1/4 cup parmesan cheese (grated)
1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese (I use mozzarella /cheddar mix)
1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
1 cup mozzarella cheese
Toppings to taste (I use pepperoni, sausage, green olives, whatever!)
Beat together cream cheese and eggs till smooth.
Add cream, parmesan cheese and spices
Spray 13x9 glass baking dish with oil
Put 2 cups of shredded cheese in dish and pour egg mixt. over Bake at 375 for 30 minutes
Spread with sauce and then add your toppings
Cover with mozzarella cheese
Bake till browning and bubbly
Let stand for 5 minutes or so.
Now I made just a few changes. First off, I skipped the sauce and put fresh thinly sliced tomato on top to save carbs. I also cut the amount of cheese for the topping in half. Our toppings were pepperoni, tomato, onion (very thinly sliced, probably only 3 tablespoons worth) and 1/4 cup of spicy breakfast sausage.
It was amazing. Now, the edges were cripsy crunch, the pieces in the middle were a little droopy, but the flavor was still amazing. I think maybe I let it sit in the pan too long. Possibly, if I had taken it out and put it on a wire rack to cool, it wouldn't have gotten soggy? I'll have to try that next time.
I almost forgot to mention, hubby and I ate this with garlic butter. We drizzled a little on top after it came out of the oven. I thought I'd died and gone to heaven. If you like Sicilian style pizza, you'll really like this.Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
